Amazing Chicken Salad





Cook 2lbs diced chicken breasts in 1/4 cup white wine, 2 tbs olive oil and two cloves fresh pressed garlic. Shred and set aside.





In a large mixing bowl:





8oz Low fat Mayo


1 squirt Yellow Mustard


1 cup green grapes, all of them cut in half


1/3 cup thinly slices green onion (scallions)


1/3 cup thinly sliced celery


1/3 to 1/2 cup Pecans


Salt and Pepper to taste





Mix this all together with the chicken and let sit in the refrigerator for about an hour to let the flavors meld.





Secret ingredient: Believe it or not, when you are about to serve it, add two tbs Pickle Juice (from a jar of Dill Pickles) and mix well. Just a word of advice though - do not add it until your ready to serve it because if you make it too far ahead and add the pickle juice too early, the acid breaks down the chicken salad and makes it runny.





Wine suggestions:


A decent Pinot Grigio like Principato or Francis Ford Coppola





Or a good Sauvignon Blanc like Bonterra or Kim Crawford.

Chicken Salad





1 cup cooked chicken (white meat), shredded


1/3 cup mayo


1 tbsp spicy mustard


1 rib celery, thinly sliced


2 green onions, sliced


1 small carrot, grated


salt and pepper


2 slices rye bread


2 leaves green leaf lettuce





Mix chicken, mayo, mustard, celery, onion, carrot, salt %26amp; pepper.


Spread on 1 slice of bread, top with lettuce, and other slice of bread.


Can add shredded cheddar or mozzarella cheese.





I like mine with a dill pickle and plain ripple chips.
I love grapes in my chicken salad, it adds a nice flavor to it - the curry is good too. Here is the recipe I have used many times. It has the measured ingredients, but I have made it so often I don't even measure it anymore - I just eye the amounts now.





1 to 1 1/2 cups diced chicken


8 to 12 red or green seedless grapes, halved


4 tablespoons mayonnaise


1 rib celery, chopped


1 green onion, with about 2 inches of green, chopped


salt and pepper, to taste


dash curry powder, or to taste, optional





Combine ingredients until blended.

3 cups chicken breast (cooked and cubed)


1 cup pineapple (diced)


1/2 cup celery (diced)


1/2 cup mayonnaise


1/4 cup raisins


1/4 cup walnuts


1/8 cup dried cranberries


2 Tablespoons sweet onion (minced)


2 Tablespoons apple juice





Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.





***You can use the chicken salad as a sandwich filling.***
I'm not sure of all the measurements off the top of my head, but it has:





shredded chicken, cooked


apples, peeled and chopped


brown sugar


ranch dressing


sunflower seeds





I prefer it over traditional chicken salad, and it's healthier.
I add whatever I have on hand--grapes, apples, nuts, seeds, celery, carrots, etc and whatever chicken I have. It always comes out so yummy!
not really recipes but more variations on the old thing. I like to add curry powder, or diced apples, or use flavored roasted chicken you can get at the market (like lemon pepper or mesquite)
I like to add chopped celery, halved red seedless grapes, dill %26amp; plain greek yogurt to shredded chicken.





Yummy on toast!
