SICILIAN PASTA PESTO SALAD





2 lbs. ziti, penne, or other pasta, cooked





Pesto Sauce:





2 cups fresh basil leaves, chopped


1/2 cup walnut or pine nuts (optional)


4-6 large cloves garlic, minced or pressed


1 cup olive oil


1 1/4 cups grated Parmesan cheese


3-4 anchovies, blended (optional)


1/4 teaspoon crushed red pepper flakes


dash of black pepper


salt to taste





Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.


Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta.

COLD PASTA SALAD





1 lb. pasta, cooked %26amp; drained


1 cup Italian salad dressing or vinaigrette


1 tablespoon Salad Supreme seasoning


3 tomatoes, chopped


2 cucumbers, chopped


1 1/2 red onions, chopped


2 green peppers, chopped





Combine all above ingredients into a very large bowl and marinate overnight. Put a lid over your bowl. Serve cold.





PASTA SEAFOOD SALAD





1 pkg. (16 oz.) elbow macaroni or rotini


3 c. broccoli flowerets


1 c. diced green pepper


2 cans (7 oz. each) tuna, drained %26amp; chunked or shrimp, crab meat or sea legs


3/4 c. sliced pitted ripe olives


1 c. prepared Italian salad dressing





Cook macaroni as directed on package; drain and rinse with cold water. Meanwhile, blanch broccoli in boiling water for 5 minutes; drain and rinse with cold water. Add to macaroni with peppers, tuna and olives. Add dressing and toss. Makes 14 cups or 10 servings.





CHICKEN PASTA SALAD





1/2 pkg. 8 oz. rotelle pasta


3 c. cubed cooked chicken


1 c. diced zucchini


3/4 c. diced celery


1/2 c. mayonnaise


1/8 tsp. pepper


2 tbsp. dried basil


3 tbsp. chopped fresh parsley (optional)


1 c. diced tomatoes


3/4 c. sour cream


1 tsp. salt


2 tsp. lemon juice


1 tsp. dried oregano





Cook pasta according to package directions; drain. Rinse with cold water and drain well. Add chicken, zucchini, tomatoes and celery. Place remaining ingredients in blender or food processor and blend until well mixed. Chill the dressing 1 hour before adding to salad. Toss salad, coating well. Makes about 10 cups.


SHRIMP PASTA SALAD





2 garlic cloves, minced


3 tbsp. olive oil


1 1/4 lbs. sm. cooked shrimp or larger shrimp cut up


1 c. sour cream


1 c. fresh or frozen cooked peas


Chopped fresh thyme to taste


Salt %26amp; pepper to taste


1 (12 oz.) pkg. semolina corkscrew pasta, cooked %26amp; drained





In a large saucepan, lightly saute the garlic in olive oil. Do not brown. Add shrimp and cook one minute. Add sour cream, peas, thyme, salt and pepper and mix thoroughly. When heated through (do not boil) either pour over hot, drained pasta or allow to cool and toss with cold, cooked pasta. Sprinkle with Parmesan cheese. Serve with a small green salad with herb vinaigrette dressing and garlic bread. Serves 4 to 6.

*1 box of tri-color pasta


*1 bottle italian dressing


*red onion


*green %26amp; red bell pepper


* small broccoli floret


*cucumber


*tomato


*black olives (sliced)


*shredded parmasean cheese





Boil the pasta, drain it and let it cool off. Chop up all the ingredients and toss them into a large bowl with the pasta and about a cup of the cheese. Add as much italian dressing as needed to coat the salad.Toss it and serve!

my mom makes a delicioso maceronie salad


it only takes





maceronie (small like elbows or mini shells)


can of tuna


celery (chopped tiny)


sliced olives


mayo





boil the pasta and strain


put the pasta (while in the strainer) in the sink and run water over it till the pasta is cold


mix all of the ingrediants together to your liking
