I want a really good chicken salad recipe?

I hate chunky chicken salad. do you boil the chicken? And how do I get it all ground up? Similar to canned tuna or finer. I do not like the canned chicken either. What other ingredients should I use besides chicken and mayo?I want a really good chicken salad recipe?
I us ually roast mine, w/ skin and bone, breasts only. Let cool enough to debone and deskin, then chop. How you cut up the cooked chicken depends upon how you plan to serve it. If you want it in a finger sandwich, then you will want to finely chop the chicken, and you don't need much more than mayo, S%26amp;P, maybe some minced celery for crunch.





But if you plan to serve it as an entree, eaten w/ a fork, then leave the chicken in larger chunks, and you can really get creative w/ the ingredients, like curry, fruit, and nuts.








Chicken Waldorf Salad





1 lb. cooked sliced chicken breast


1 green apple, cored and chopped


1 red apple, cored and chopped


¾ cup Chopped celery


¾ cup raisins


¾ cup chopped walnuts


1 cup mayo


1 cup heavy whipping cream, whipped to soft-peak stage


1 tsp. dry mustard powder


Salt and pepper to taste





After chopping apples, toss in a bit of orange juice to prevent browning. Combine the chicken, with remaining ingredients, and combine thoroughly. Serve chilled. Serves 6-8.

Exotic Chicken Salad





1 cup mayo


1½ tsp. curry powder


1 Tbsp. soy sauce


1 Tbsp. lemon juice (I have used lime, too)


Optional: ¾ cup Major Grey’s Chutney


4 cups chopped cooked chicken meat


1 (5 oz.) can sliced water chestnuts


1 cup finely chopped celery (about 2 stalks)


1 pound fresh seedless grapes, halved


1 cup toasted slivered almonds


1 (16 oz.) can pineapple chunks, drained





Mix first 4 ingredients together in large bowl w/ tight-fitting lid. Mix in chutney at this time, if so desired. Add remaining ingredients and toss gently. Refrigerate. Serves 8-10.

Bridesmaids' Luncheon Chicken Salad





1½ cups Hellman's Mayo


3/4 cup Major Grey's Chutney (if chunky, chop up)


1 tsp. curry powder


2 tsp. grated lime zest


¼ cup fresh lime juice


½ tsp. salt





In large bowl, combine above ingredients and mix well.





4 cups white meat chicken, cooked and cut into small pieces


3 (8 oz.) cans chunk pineapple, drained


2 cups diagonally-sliced celery


1 cup thinly sliced green onions, tops and bottoms


½ cup sliced, blanched almonds, toasted





1. Gently fold remaining ingredients into mayo mixture.


2. Chill at least 4-6 hours; can be made the night before. Toss before serving, being sue to get all the way to the bottom.


3. Serve on crisp, chilled salad greens.





Serves 8-10.

CHICKEN SALAD SANDWICHES





1 c. finely chopped cooked chicken


1/4 c. finely chopped celery


2 hard cooked eggs, chopped


2 tbsp. sweet pickle relish


1/4 tsp. salt


Dash of black pepper


1/3 c. mayonnaise


3 tbsp. softened butter


Sandwich bread





Combine first 6 ingredients. Spread softened butter on bread, then spread salad mixture on bread and cut into desired shapes. Chill in covered container until ready to serve





OR





CHEDDAR CHICKEN SALAD SANDWICH





2 c. chopped, cooked chicken


1/2 c. Miracle Whip salad dressing


1/2 c. chopped, pitted ripe olives


1/2 c. (2 oz.) shredded sharp natural Cheddar cheese


1/4 c. chopped green pepper


1/4 c. chopped onion


6 croissants, split


Lettuce





Combine chicken, salad dressing, olives, cheese, green pepper and onion; mix lightly. Chill. Fill croissants with lettuce and chicken mixture. 6 sandwiches





OR





HOT CHICKEN SALAD SANDWICH





2 c. chicken, cut up


2 c. diced celery


1/2 c. toasted almonds


1 c. mayonnaise


2 tsp. grated onion


2 tbsp. lemon juice


1/2 c. grated American cheese


1/2 c. crushed potato chips





Mix together first 6 ingredients. Put chicken mixture on half a bun, top with cheese and potato chips. Broil until cheese melts





OR





CHICKEN SALAD SANDWICHES





10 c. cooked chicken breast


2 c. whole green grapes


2 c. canned pineapple chunks


1 c. chopped celery


1 c. chopped green onions (5)


2 cans drained water chestnuts


2 (5 oz.) cans Chinese noodles


16 croissants





DRESSING:





2 c. sour cream (sm.)


2 c. Best Foods real mayo


1/2 tsp. curry powder





Mix all ingredients together. Add noodles just before servings. Serves 16.





OR





CHICKEN-FRUIT SALAD OR SANDWICH SPREAD





2 c. white meat of chicken, cooked and diced


2 med. apples, diced


1/4 c. chopped almonds


3 tbsp. mayonnaise


3/4 tsp. curry powder


1 c. pineapple chunks, drained





Toss all ingredients together. Spoon individual portions onto salad greens. Yield: 6 servings.

I roast boneless skinless breasts in the oven, and then use a fork to ';shred'; the chicken. I add chopped walnuts, rasins, chopped apples, mayo, chicken, and a little dash of curry.
