I am just getting bored with my usual fried potatoes and mashed potatoes, I know there are probably millions of ways to cook potatoes but I can't seem to think of anything else. My kids don't like potato salad (and neither do I quite frankly) but I was looking for something maybe different and really flavorful, thanks!Anybody have some yummy potato recipes I can make, my kids don't like potato salad?
recipe for you:
i cube up potatoes and throw them in a glass pan with green pepper diced and baby carrots and a shake of dry onion soup mix and a couple spoons of vegetable oil and cook for one hour covered in a 350f oven.
recipe two:
cube potatoes and add 2tbsp of vegetable oil and cover and cook one hour
recipe three:
slice potatoes and mix in spoons of margarine and cook an hour covered and when you take it out sprinkle moz. cheese it will melt right away from the heat.

Potato Soup
Soup:
1/4 cup unsalted butter
1 small onion, coarsely chopped
1 medium leek, white part only, coarsely chopped
1 rib celery, coarsely chopped
1 sprig fresh thyme
4 cloves garlic, crushed with a chef's knife
1 slice apple-smoked bacon or other smoky bacon
1 bay leaf
3 Idaho potatoes, peeled and sliced 1/4-inch thick
1 1/2 cups chicken stock
1 1/2 cups heavy cream
3 tablespoons creme fraiche
Salt and freshly ground white pepper
In a large saucepan, melt butter over medium heat and add onion, leek, celery, thyme, garlic, bacon, and bay leaf. Sweat the mixture over medium-low heat without allowing it to color at all, stirring occasionally, for 5 or 6 minutes or until very tender. Add potatoes, stock, and cream. Liquid should cover potatoes; if it does not, add a little water. Bring mixture to a simmer and cook, partially covered, for about 20 minutes, until potatoes are tender. Puree mixture in a blender and add creme fraiche. Push the soup through a fine strainer into a clean saucepan and season, to taste, with salt and white pepper.
Well, you can add bacon, cheese, ham, turkey, Eggs, onions, garlic, and different herbs and spices in mashed potatoes.

Potato Pancakes..just grate potatoes, add some baking powder, a little flour, an egg, salt, and fry in oil. Some people add a little diced onion. serve with sour cream, or sour milk
I too don't like potato salad. However I make my version of potato salad with good olive oil and Tastefully Simple season salt, instead of mayo and whatever else people use. This dish is best served at room temperature and you don't have to worry about it going bad at picnics. I also like buttered or parsley potates.
Oven roasted potatoes are good too. The recipe is on the Lipton Onion soup box or package. You cut up the potatoes, toss them in olive oil and soup mix and bake them in the oven til they're done.
Also have you considered other starches? I like rice and cous cous. They are both really easy to make and very inexpensive. Cous Cous cooks in 5 mins! You can put all kinds of seasoning in rice and cous cous too. Cook them in stock for an extra layer of flavor.
LAZY DAY PIEROGIS
1 BOX OF LARGE STUFFING SHELLS
1 MEDIUM ONION CHOPPED
2 STICKS OF I CAN'T BELIEVE ITS NOT BUTTER
2 ENVELOPES OF IDAHONIAN COMPLETE INSTANT MASHED POTATOES OR MAKE MASHED POTATOES FROM SCRATCH
1 PACKAGE OF SHREDDED VELVEETA CHEESE
COOK SHELLS IN SALTED WATER DRAIN AND COOL TO HANDLE. IN THE MEANTIME SAUTE ONION IN MARGARINE TILL TENDER.
MAKE THE POTATOESS CUTTING DOWN ON THE WATER. ADD THE SHREDDED VELVEETA CHEESE. MIX TILL MELTED
STUFF SHELLS WITH POTATOE MIXTURE. LAYER IN A CASSEROLE SPRAYED WITH PAM. ADDING ONION MIXTURE BETWEEN LAYERS.
BAKE AT 350潞 FOR 30 MIN.

I just cut into quarters - skin %26amp; all and salt and drizzle oil/olive oil over them and bake - 20 mins........they all said YUM - where did you get these from....can also add cheese at last minute to make them melty cheesey. And so EASY :o)
I love to make hashbrown casserole for my family and they love it too. You can do this in the crock pot or the oven depending on the time you have.
2 packs hashbrowns
2 cans cream of mushroom soup
2 cups of shredded cheese ( I like sharp cheddar)
1 small carton of sour cream
salt and pepper to taste
1 tsp garlic
1 stick melted butter
1/2 tsp onion powder
Melt stick of butter and mix with hashbrowns (do not thaw hashbrowns)
Mix in cream of mushroom soups and cheese.
If you are using the crock pot do not add sour cream until you are ready to serve. If you are using the oven add sour cream and then put in a greased 9X13 pan or a greased crock pot. Top with a small amount of cheese.
Bake at 350 degrees for 30-40 minutes or until brown and bubbley. Cook in crock or 2 hours.

When I was small, my mom made me a peeled baked potato with a bit of butter and garlic and she would make a happy face with ketchup! It always made me hungry.
Try gratin recipes... here's one for sweet potatoes (also know as kumara)
Kumara pie
INGRIDIENTS
1kg of sweet potatoes (kumara)
25g butter
100g onions, very thinly sliced into rings
500ml of sour cream
125ml of double cream
1 level tsp of garam masala
large pinch of nutmeg
1 clove of garlic
salt %26amp; pepper
METHOD
Preheat oven to 180掳/350掳f/gas 4
Peel the potatoes, removing any black eyes. Cut into 5mm thick slices. Rub the sides of an oven-proof dish with a little of the butter and cut the rest into small cubes. Mix all the ingredients together and spread evenly in the dish. Place in the pre-heated oven and cook for at least 1 hour until the potatoes are soft and some are beginning to go crisp and turn brown on top. Serve with salad.
If you don't mind a lot of flavor I sometimes fry salt pork and make a gravy by adding flour and garlic salt that I puor over raw sliced potatoes and bake in oven until done (45min)
