Any good shrimp salad recipes?

I want to entertain some of my hunnies co workers, i want to make some kind of shrimp salad maybe like a grilled shrimp cesar salad with a nice hunk of toasted bread, the only thing is i cant think of any thing to make please help their will be wine flowers and music i hope they like it thanks for your helpAny good shrimp salad recipes?

Shrimp Salad





鈥?2 1/2 pounds (12 to 15 count) shrimp


鈥?1 tablespoon good olive oil


鈥?Kosher salt and freshly ground black pepper


鈥?1 cup good mayonnaise


鈥?1 tablespoon orange zest (2 oranges)


鈥?2 tablespoons freshly squeezed orange juice


鈥?1 tablespoon good white wine vinegar


鈥?1/4 cup minced fresh dill


鈥?2 tablespoons capers, drained


鈥?2 tablespoons small-diced red onion


Directions


Preheat the oven to 400 degrees F.


Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.


Meanwhile, make the sauce. In a large bowl, whisk together the mayonnaise, orange zest, orange juice, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. When the shrimp are cool, add them to the sauce and toss. Add the dill, capers, and red onion and toss well. The flavors will improve if you allow the salad to sit at room temperature for 30 minutes. Otherwise, chill and serve at room temperature.

* 3 tablespoons plus 1 teaspoon kosher salt


* 1 lemon cut into quarters


* 4 pounds large shrimp in the shell (16 to 20 shrimp per pound)


* 2 cups good mayonnaise


* 1 teaspoon Dijon mustard


* 2 tablespoons white wine or white wine vinegar


* 1 teaspoon freshly ground black pepper


* 6 tablespoons minced fresh dill


* 1 cup minced red onion (1 onion)


* 3 cups minced celery (6 stalks)





Directions





Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook uncovered for only 3 minutes or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cold water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.





In a separate bowl, whisk together the mayonnaise, mustard, wine or vinegar, 1 teaspoon salt, pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve or cover and refrigerate for a few hours.

Marinate with a good olive oil, fresh chopped garlic and onion, parsley fresh or dry and some fresh lemon juice. You can either grill them on screwers or sautee in frying pan....cook some good pasta .....and your ready to entertain...
