Does anyone have a good Laab Issan salad recipe?

I'm looking for the beef or chicken that is cooked with onion, cilantro, and chili pepper, etc. You usually wrap it up in lettuce and it comes with cucumber. Num!Does anyone have a good Laab Issan salad recipe?
A spicy Thai salad with a balance of hot, sour and sweet flavors.





Laab Salad





Ingredients


8 ounces ground chicken


3 tablespoons fresh lime juice


3 tablespoons fish sauce


2 teaspoons sugar


1 pinch hot chili pepper


2 tablespoons rice flour


2 ounces green onions, sliced


2 ounces fresh cilantro, coarsely chopped


3 tablespoons red onions, chopped


2 ounces fresh mint, coarsely chopped


Directions


1 Brown meat in wok over medium heat without any oil.


2 transfer to a bowl and mix with lime juice, fish sauce and hot pepper.


3 Add the ground rice and remaining ingredients and combine mixture.


4 Place mixture on a bed of shredded lettuce.


5 garnish with cucumber, carrot and cabbage.

The first recipe is okay, but missing a couple of key elements. You need galangal, a rhizome related to ginger--any Asian store will have it. It's the key flavor in laab; if you can't find it, then lower your expectations and use a Tbsp of minced ginger instead.





Shallots are better than onions, red onions better than yellow or white.





Also, fresh lemon grass helps a lot and is generally available in grocery stores these days.
