Our potato salad is always very popular at holiday dinners. First, boil 5 lbs. of white potatoes (until fork tender) and one egg for each potato (simmer for 16 minutes after they come to a boil). Then, peel the potatoes and eggs once they are cool enough to handle. Cut potatoes into chunks and put in a large bowl. Cut eggs in half and separate egg whites and yolks. Cut egg whites into chunky pieces and put in bowl with potatoes. Put egg yolks in a small bowl, mash, and mix with about 1 cup of mayonnaise and a few tablespoons of mustard (just a guess here on the quantities). Add salt and black pepper to taste. Mix yolk mixture in with potatoes and egg whites.
DO NOT ADD ANYTHING ELSE, no matter what other people may tell you. No one really wants celery, pickles, or any other green items in their potato salad!!Does anyone have a really good potato salad recipe?
I make mine with cubbed potatoes, cooked and drained. Add to a bowl and add 1 large sweet chopped onion, sweet pickle relish, mayonnaise, salt and pepper to taste and a lot of dill weed (maybe 4 tablespoons full) depending on the amount I make. I usually use 4-5 medium sized potatoes.
Mix and enjoy!
Gran-Gran's Potato Salad
6 cups Mashed potatoes (kept hot)
1/4 cup mustard
1/2 cup miracle whip
1/2 cup celery, chopped
1/4 cup green onion chopped
1/4 cup hamburger dill slices, chopped
3 boiled eggs, chopped
All amounts are approximate, adjust to your taste. My grandmother never measured a thing, so I just add until it looks and tastes right. It should be yellow, creamy, and served warm.
dill relish is the way to go
boil 6 potatoes then drain cool and dice
boil 6 eggs peel cool and dice
chop 3 stalks of celery into medium pieces
chop 1/2 med onion into medium fine pieces
chop 3 dill pickles into medium fine pieces
1 small can chopped olives
1 small jar pimentos
place all of the above into a large bow
take a large glob of mayo and 1/2 that amount of mustard mix well salt and pepper to taste sprinkle with 1/4 teaspoon of dill weed.
Yum!!
Use egg mayo for creaminess and add chopped fried bacon, boiled eggs cut up with egg slicer and chopped up shallots to the potatoes.
i boil my potatoes, cut them into bite size cubes put them in a big boil, chop up some scallions add them in, chop up some hard boiled eggs add them, pour in some miracle whip and mix it all around until its as creamy as you want adding more mayo if you want, salt and pepper to taste and sprinkle some paprika on the top you can also serve deviled eggs on the top
cut the hard boiled eggs in half scoop the yolks into a bowl and mash them with some miracle whip scallions, a little mustard, put them back into the whites of the egg and top with salt pepper and paprika
Mix boiled cubed potatoes, about 6 medium, (while they are still warm) with chopped sweet onion, thin chopped celery, sweet pickle relish, chopped hard cooked eggs, mayonaise to taste, a tablespoon of mustard, lots of salt and pepper, and top with green pepper rings and a sprinkle of paprika for color.
2 pounds russet potatoes
1 cup mayonnaise
4 teaspoons sweet pickle relish
4 teaspoons sugar
2 teaspoons minced white onion
2 teaspoons prepared mustard
1 teaspoon vinegar
1 teaspoon minced celery
1 teaspoon diced pimentos
1/2 teaspoon shredded carrot
1/4 teaspoon dried parsley
1/4 teaspoon pepper
dash salt
1. Lightly peel the potatoes (you don't have to get all of the
skin off) then chop them into bite-size pieces and boil in 6 cups
of boiling, salted water for 7 to10 minutes. The potato chuncks
should be tender, yet slightly tough in the middle when done.
Drain and rinse potatoes with cold water.
2. In a medium bowl, combine remaining ingredients and whisk until
smooth.
3. Poured drained potatoes into a large bowl. Pour the dressing
over the potatoes and mix until well combined.
4. Cover and chill for at least 4 hours. Overnight is best.
Makes 6 cups (about 8 servings).
all i do is boil potatoes, add some mayo, chopped onion, parsley and a little salt. really simple but tasty.
