What is the best Potato salad recipe...to go along with fried chicken?

I have the old Hellmanns recipe my mom used to make and she added green olives anyone got anything better?What is the best Potato salad recipe...to go along with fried chicken?
I like the old fashion mustard potato salad,especially if it's pan fried chicken.What is the best Potato salad recipe...to go along with fried chicken?
Boil red potatoes skin on. When they are sone slice them about 1/8 thick. Now mix mayo and a pkg of powdered ranch dressing mix. Mix that with potatoes, boiled egg, diced celery and green onion, and real bacon bits. Salt and pepper to taste.
Grandma's Potato Salad


Ingredients:





鈥?1 cup water


鈥?1/2 cup butter or margarine


鈥?1/4 cup vinegar


鈥?2 eggs


鈥?1/4 cup sugar


鈥?4-1/2 teaspoons cornstarch


鈥?1 teaspoon salt


鈥?3 stalks celery, diced


鈥?3 hard cooked eggs, sliced


鈥?3/4 cup salad dressing


鈥?3/4 cup heavy cream, whipped


鈥?6 pounds red potatoes, peeled, cooked and diced


鈥?1/2 cup chopped onion


鈥?1/4 cup green onions, sliced


鈥?1/2 teaspoon pepper


鈥?diced green pepper (optional)


鈥?paprika


Method:





In top of a double boiler over boiling water, heat water, butter and vinegar. In bowl, beat eggs, add sugar and cornstarch. Add to butter mixture, cook and stir constantly until thick, 5 to 7 minutes. Remove from the heat and cool. Stir in the salad dressing and fold in the whipped cream. In a large bowl, toss the potatoes, onions and green oions, celery, green pepper and salt and pepper. Pour dressing over, toss and mix gently. Chill. Garnish with sliced hard-cooked eggs and paprika.
In a blender, combine 1/2 cup fresh basil leaves, 1/2 cup lemon juice, 1/2 cup extra virgin olive oil, 1 tsp salt and 1/2 tsp pepper. Blend.





Use this on salad greens, cooked potaotes for potato salad, or drizzled on cooked chicken, pork or seafood.

We have a potato salad recipe that we like.





When the potatoes are done boiling then add:





Hard Boiled eggs


Bacon


Celery


onions


pepper


garlic


seasoned salt to taste


green pepper


mayo


(add how much you like)

I have a tasty German recipe.





1 kg firm waxy potatoes


1 onion


half a cup of meat broth (try to use fresh)


sunflower oil and white wine vinegar


salt and pepper





First of all, cook the potatoes in their skins until tender.


Once cooked, wait until cool enough to handle. Then skin the potatoes using a vegetable peeler or sharp knife. Then slice into thin slices.





Add the finely chopped onion and then the hot meat broth.


Only add enough broth to make the potatoes moist. They should not be swimming in it!!! Add salt and pepper to taste.


Leave for an hour.





Then add sunflower or rape oil, start off with a couple of tablespoons. Then add some white wine vinegar, again a couple of tablespoons. Mix thoroughly and then taste.


Add more oil or vinegar to taste.





The potato salad should be quite moist, not too dry.





This is excellent served with all meats.
This is good.





1. two potatoes


2. salt, pepper, vinegar


3. sour cream t table spoon


4. cilantro


5. optional: bacon bits, croutons, tomatoes, salsa, beans, lemon, peas, onions, green chili (about 1, add more if you like spicy)

1. Boil the potatoes as you like. Cut it in small sugar cube size pieces

3. Add any combo of the optional ingredients to make it taste different.
Oh I am so glad to share this.... add some sliced (thin or thick) radishes to it... if you like radishes. They add a great flavor %26amp; crunch.





If not, use some celery.. something to give it a little bit of a bite.. perhaps some sweet pickle relish or a bit of pickle juice in the mayonnaise dressing.





There are so many varieites of potatoe salad.. personally I prefer a mayo/mustard blend for the dressing as opposed to only mayo or mustard (more mayo than mustard though if using the mayo/mustard blend ... about 2/3 to 1/3 ratio)





Or try one of those speciality mustards (dijon, horseradish, spicy brown) to give it a little bit of a kick. MMMMM... I am getting hungry.





One bit of advice it to thoroughly let your potatoes drain after boiling them to get all the moisture out so you don't have a watery dressing on them. Return them to the hot pot after draining and toss around a sec to get off lots of the water.. then return again to strainer or collander.

My potato salad is a guaranteed hit!





Potato Salad with Bacon





3 large Idaho potato's boiled,chilled, peeled, and diced


3 hard boiled eggs peeled and chopped


1 cup of mayo


1 tablespoon of mustard


1 tablespoon each sweet and dill relish


1 small can of sliced black olives


3 green onion sliced


2 stalks of celery chopped


1 cup shredded cheddar cheese


salt and pepper to taste


3 slices of bacon cooked till crisp and then crumbled


Combine all ingredients except bacon and mix well then chill for at least an hour to let flavors merry. Then stir in bacon before serving. The bacon is a nice surprise!
Six large potato's boiled and cut in bite size pieces.


1/2 cup mayo bestfoods or Hellman's (same thing)


1/3 cup each Dijon %26amp; yellow mustard


2 tablespoons garlic salt (lawry's)


1/2 cup each chopped onion %26amp; celery


two boiled eggs chopped


Mix well chill for four hours or over night
I like my potato salad easy. Cook the potatoes, then peel them. Cut them into cubes add sour pickles and some mayonnaise. Salt to taste. Simple but delicious.
