PICNIC POTATO SALAD
2 lbs new small red potatoes
3/4 cup extra virgin olive oil
3 tablespoons red wine vinegar (see note)
1/4 cup red onion, sliced
1 shallot or green onion, minced
3 cloves garlic, finely minced
1/4 teaspoon each of fresh basil and oregano, minced
salt and pepper, to taste
2 tablespoons fresh parsley
1/2 green pepper, cut into thin strips
Because this potato salad contains no mayonnaise, it's a safe bet for your next picnic or cook-out for those long hot Summer days. Be sure to taste and season well.
Scrub potatoes, removing eyes and discarding any green ones. Add 1 teaspoon salt to a medium saucepan of boiling water; gently lower potatoes into water and cook, with skins on until fork tender. Rinse briefly under cold water. Cut into quarters and return to hot pan. Add olive oil and remaining ingredients.
Stir for one minute over medium heat. Set aside to cool.
May be served warm or cold.
Note: 1 tablespoon of balsamic vinegar and 2 tablespoons red wine vinegar may be substituted for the 3 tablespoons wine vinegar for a more piquant blend. Add the garlic to the vinegar and let it sit for 30 minutes before preparation to help take the ';edge'; off.Potato salad recipes with no eggs?
1-New Potato Salad
2 lb Potatoes; new (approximatel
1 ea Dill cream dressing recipe
5 ea Green onions; finely choppe
1 x Salt %26amp; pepper to taste
A local restaurant serves a simple, but elegant, potato salad as part of their Sunday Brunch menu. This is my own attempt at duplicating it. Stir the chopped green onions into the Dill Cream Dressing. Add salt and pepper to taste. You may also want to add more lemon juice or Dijon mustard at this point, as this produces a fairly bland dressing. Slice potatoes (leave skins on) about 1/4 inch thick. Place in a large bowl and fold in the dressing. Serve chilled. Best made the day before so the flavors have a chance to mingle
2-Hot Potato Salad
3 c Cooked cubed Potatoes
1 1/2 c Coarsley chopped Apples
10 x Slices Bacon
1/2 c Chopped Onion
1/2 c Celery, chopped
1 1/2 tb Flour
3/4 c Apple juice (or water)
1/3 c Vinegar
1/3 c Sugar
In skillet, cook bacon. Remove and drain. Pour off all but 3 T bacon fat, add onion and celery and stir fry 1-2 minutes. Blend in flour. Add juice and vinegar, stirring until mixture thickens. Add sugar. Preheat oven to 350 deg F. Place potatoes, apples, and crumbled bacon in greases 1 1/2 qt casserole. Add skillet mixture, mixing lightly. Cover and bake 30 minutes.

you can leave out any ingredient in salads that you either do not have or do not like.
My grandmother didn't eat onions, so she never made potato salad or anything else with onions! She and my mother used the exact same recipe only Gran left out the onions.
My husband wants sweet pickles in his and the recipe calls for dill pickles and dill pickle juice to thin the mayo and mustard sauce.
ANY recipe will work! Just leave out those ingredients you don't have or like!
chopped boiled potato
about ice cube size or smaller
then put peas, chopped square carrots
mix in with mayo then put a lot of chopped small cucumbers
into tiny squares and then DONE!
yum and you can add olive oil if to dry or more mayo :)
and i like it cold and crunchy so a lot of pickles chopped. and you can add salt

I'm sure there is one somewhere, but all you have to do is find a good recipe, and omit the eggs. Really.
You don't need a speicific recipe just leave the eggs out, but really next to the potatoes that is my favorite part. Save'm all for me lol...
