Has anyone got a great salad recipe thats a bit different ?

I love making new salads for my family and I was wondering if anyone had a delicious salad they love.Has anyone got a great salad recipe thats a bit different ?
Here's 2 of my personal favourties





1) Yummy Summer Salad





Rocket leaves / Mix salad leaves


1-2 vine ripe tomatoes, chopped


1/2 cucumber, chopped


4 mushrooms, sliced


1/2 spanish onion, thinly sliced


1/2 green pepper


1/2 red pepper


1 avocado, sliced


1 fresh mango sliced


10 cashew nuts, coarsely chopped - optional


100g ricotta cheese or fetta cheese - optional





Dressing:


1/4 cup olive oil


1 tblsp balsamic vinegar


1/2 clove galic, mashed


pinch sea salt


pinch fresh ground pepper





Place all ingredients in a bowl in the order above.


Shake the salad dressing and pour over.


Enjoy! =)





2) Chicken, avocado and sun dried tomato salad with honey mustard.





Mixed salad leaves


1/2 cucumber, chopped


1 roast chicken breast, sliced


1 avocado


1 vine ripe tomato, diced


1/2 green capsicum


1/4 cup semi sun dried tomatoes


handful of spring onions





Honey mustard dressing:


1/2 cup sour cream


1/2 cup egg mayo


1 tblsp seeded mustard


1/4 cup honey





Place ingredients in a bowl in the order above.


Drizzle honey mustard dressing all over.

This one is quite simple, but Delicious........serves 4-6





1- 7oz. package of Spring mix salad greens


1- package craisins (dried cranberries)


1- 4oz. crumbled feta or Gorgonzola cheese


chopped walnuts


rasberry vinaigrette (I like Cains)





Divide salad greens equally on individual serving bowls or plates, sprinkle w/ craisins, walnuts and cheese to your own liking. I like just a few walnuts and more craisins and cheese. Serve dressing on the side. Drizzle dressing over salad and be careful not to use too much or it will over power the other flavors. This salad is always a hit at dinner parties.....even the kids enjoy this one.
Here is a simple recipe i made up from what i had left in my cabinet and fridge one time. The 5 yr old twin boys that i was nannying at the time LOVED it. The cheese soup takes the place of the mayo as a binder.





Tuna Mac Salad





2 c. elbow macaroni


half a stick of butter


1 c. milk


1 pkg. dry cheese mix (from Mac n' Cheese)


1 10.5 oz can Brocolli/cheese soup(uncooked)


3 6 oz. cans Albacore tuna (drained and flaked)


(You can use canned Chicken for a different flavor)


1 small can whole kernel corn, or mexi-corn (drained)


1 15 oz. can mixed vegetables (drained)


1 c. chopped green onions


1/2 t. crushed red pepper


salt and pepper to taste





You can mix this in the macaroni cook pot, or a large bowl.


In a large pot, cook macaroni until its just past the ';al dente'; stage. Then drain macaroni and replace in pot to steam the water off. Then put butter in macaroni and stir, after butter is melted then put milk in, (the coldness of the milk will keep the butter from melting). After mixing milk into macaroni, add the brocolli/cheese soup and dry cheese mix and mix well.


Next is the corn, mixed veg's, and green onions, after mixing all these in and stirring, add your seasonings. I find that 1/2 teaspoon of crushed red pepper is usually enough heat for most ';non chili heads';.......but if you want to kick it up, you can add more.


You can make this the night before and refrigerate it, since theres no mayo in it, it travels well, so its great for picnics, church socials or family get-togethers.

chicken Cesar salad:





Ingredients (serves 4)


1 (about 200g) single chicken breast fillet


1 egg


50g Weight Watchers rindless bacon rashers, cut crossways into thin strips


30cm baguette (French breadstick), diagonally cut into 1cm-thick slices


1 baby cos lettuce, leaves separated, washed, dried


150ml Caesar salad dressing


Method


Heat a non-stick frying pan over medium-high heat. Add the chicken and cook for 4-5 minutes each side or until cooked through. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest. Thinly slice across the grain.


Meanwhile, place the egg in a small saucepan of cold water and bring to the boil over high heat. Reduce heat to medium and gently boil, uncovered, stirring occasionally, for 7 minutes. Drain and cool under cold running water. Peel and thinly slice.


Heat the frying pan over high heat. Add the bacon and cook, stirring, for 5 minutes or until crisp. Preheat grill on high. Cook the baguette slices under grill for 1 minute each side or until golden.


Arrange the chicken, egg, croutons and lettuce on a serving platter. Drizzle with the Caesar salad dressing and sprinkle with bacon. Serve immediately.
Ground turkey taco salad





start off with 2 or more chopped green onions and add one package of ground turkey. taco season if you want.





while that is cooking on med heat cover with lid so it wont dry out.

I always put the corn chips on top and spread the meat so it makes the chips a little soggy. I let it cool for like 5-10 minuets so the veggies don't limp from the heat. I do not add salt in the meat because the chips have a lot of salt. Then toss and top with salsa and sour cream.





You can put what ever you want in it-bell peppers, olives, corn, mushrooms, carrots, beans and exc exc
I am not sure if you like this one. But I will tell you. My my mum use to make this salad. Mayonnaise, broccoli, mushroom, macaroni, Tatar sauce and cheese sauce. Broccoli don't cook them, boiled them in hot water. That's same for macaroni and mushroom. Mix everything together.
