For best results, use only the best parts of the chicken breast. Make sure you remove all traces of skin, fat, veins and gristle.
Dice the meat into pieces no bigger than about half an inch and most of it not a lot smaller.
Slice up some celery, chop up some yellow (mild) onion, a shoot of green onion, half a sweet apple and a handful of chopped nuts. (walnuts and pecans work real well. Maybe halve some red or green seedless grapes.
Mix all this with enough mayonaise to coat everything, but not drown it all in a goey mess. I like to add some yellow or brown mustard and, either a dash of lime or lemon juice. These ingredients will add tartness to the mayo coating, so, if you don't want that, leave them out.
My wife likes to add salt. I like to add some black pepper.
But, when this is spread onto your favorite bread, it makes for a yummy sandwich with marvelous gems of texture and sweetness in almost every bite. If not on a sandwich, it also looks very good on a bed of lettuce or other salad greens.
If you shred and finely chop the chicken instead of dicing it makes a decent party dip. In this case, you can substitute some sour cream for half the mayo. For this, I also like to add a dash of garlic powder. I guess it would be a good idea to leave out the big chunky grapes for this.Do you have a chicken salad recipe that calls for mayo?
Honey Chicken Salad

3 cups cubed cooked chicken
1 cup halves seedless grapes
1-8 oz can mandarin oranges
drained
1 -2 oz package slivered almonds
or walnuts
1/4 cup chopped celery
Dressing
****************
3/4 cup Helmans Mayo
( or 1/2 c mayo and 1/4 cup sour cream)
2 Tablespoons honey
1 Tablespoon lemon juice
1.2 teaspoon celery salt
Combine salad ingredients. Combine dressing ingredients. Toss together and chill.
Bested served within several hours of preparation. If stored longer...drain off liquids that accumulate
You could add hard boiled eggs instead of fruit
2 boiled chicken breasts, shredded or diced
1 small onion, diced
2 boiled eggs, diced
salt/pepper to taste
1/4 to 1/2 cup mayo (depending on how you like yours)
1 tbsp pickle relish, optional
Diced chicken breast, toasted almonds and diced red sweet apple, mix with mayonnaise with a teaspoon of ketchup stirred in and serve on a bed of green leaves salad.
Sometimes I also add diced celery.

mayo to wet all ingredients
spoon full of sour cream
dollup of dijon mustard
cajun seasoning
mix all together, chill for at least 3 hours
serve on lettuce, wheat bread, or crackers
We just cut up the cooked chicken and add as much mayo that we like. Some people like to add onions and celery.
