i add a lot of parsley to mine- just chop up some boiled potatoes into chunks, add a handful of chopped parsley, a few chopped green onions, the juice of half a lemon, 2 crushed garlic cloves and a good lug of olive oil (and some seasoning)- serve it hot or cold, and it tastes great wrapped up in some pita with chicken or fishWhat's your favorite potato salad recipe?
I make it with potatoes, hard boiled eggs, mayo, a touch of horseradish, chopped red onion, a touch of mustard, salt and pepper.
The horseradish makes it extra good!
Cut the mayo back 2 tablespoons and add 2 tablespoons of the juice from garlic pickles (I like Claussen's refrigerated) and dice up about 2 tablespoons of the pickle and add. You can also cut another tablespoon of mayo and add 1 tablespoon of yellow mustard. If you do this, eliminate the olives unless they are black olives. Green would compete with these flavors and be overwhelming.
My all-time favourite potato salad is very simple.
Dressing (most important in all salads) is about equal parts of good-quality mayonnaise and soured cream/creme fraiche. Add finely chopped onions to taste. Then add some finely chopped crisp but not too sweet apple, adding it quickly to the mixture so it doesn't discolour. This really gives an extra special ';something';; if your serving is for about 2-3 people, add about 1/4 of an apple, with skin on. You can always add more!
Then gently fold in your cooked, unpeeled, sliced potatoes.
You can also add a little celery, finely chopped, for ';crunch';. I sometimes like to top it with a boiled egg, the white chopped and the yolk sieved.
Try adding chopped onions, fresh chopped basilicum (pesto) and olive oil /or ready pesto sauce and some olive oil if needed. Enjoy!
SOUNDS GOOD TO ME when do I eat? but, in earnest it was
the MAYO used to make the potato salad was #1 criteria for
me...IF not BEST FOODS MAYONNAISE, just take home the
salad on your way out. diced celery, carrots and bacon chips added to your recipe, and im serious when do I eat!...2bz.
I make mine with mayo, white onions (finely diced), diced apples (peeled), pickled sweet red peppers (diced), salt %26amp; pepper.
I just add what I like, you have a great start,
I would add a little sour cream, dashes of hot sauce, celery-chopped small, small amount of chopped garlic dill pickle,
celery salt, garlic granules, coarse pepper, a squeeze of mustard, and anything else you'd like.
Then I write down my recipe if it turns out really really good.
and reuse it next time.

Hot Potato Salad
INGREDIENTS:
5 slices bacon, diced and cooked until crisp
2 tablespoons bacon drippings
1 1/2 tablespoons all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1 tablespoon prepared mustard
1/2 cup cider vinegar
1/2 cup water
4 cups sliced cooked potato
PREPARATION:
Cook bacon; set aside. Heat bacon drippings; blend in flour, sugar, salt and mustard. Gradually add vinegar and water, stirring constantly until smooth. Continue cooking over low heat, stirring, until thickened.
Add potato and heat through, gently stirring to mix. Sprinkle with reserved bacon.
Serves 4.
