Do you have a ';lite'; crowd pleasing salad recipe?

Looking for a ';different'; type of salad to serve at our weekly small group--leaning more toward a lighter fare. The salad will be served with seafood stuffed sole with hollandaise, so I don't want to serve a heavy salad. Maybe something with fruit? Got any salads that people go crazy over--please share!Do you have a ';lite'; crowd pleasing salad recipe?
SPINACH %26amp; STRAWBERRY SALAD WITH POPPY


SEED DRESSING





DRESSING:





1 sm. onion


1 1/2 c. sugar


1 tsp. dry mustard


2 tsp. salt


3/4 c. vinegar


2 c. salad oil


2 tsp. poppy seed





Place onion in blender and chop. Add sugar, dry mustard, salt and vinegar to onion; blend well. Add salad oil a small amount at a time and blend well after each addition. Pour into jar or container and add poppy seed. Refrigerate. Shake well before pouring over fresh spinach and sliced strawberries.Do you have a ';lite'; crowd pleasing salad recipe?
I love a fennel salad which goes beautifully with fish. Just finely sliced a bulb fennel, a small amount of the feathery leaves, equal amount of finely sliced celery and toss with a very light french dressing, if you want to add a bit more zing segments of orange (especially blood oranges)
Shrimp and Avacado salad with honey lime dressing





1 bag mixed field greens


Oregon Bay shrimp (a handful per salad)


Fetta cheese (a sprinkle per salad)


1 Red onion, diced


2 Avacados, chopped








Combine field greens with diced red onion and acacado. Top each salad with a handful of shrimp and fetta cheese.





FOR DRESSING:


2 tablespoons olive oil


1 tablespoon honey


3-4 teaspoons lime juice


1 teaspoon lime zest


1 tablespoon tarragon vinegar


2 teaspoons water


1/2 teaspoon dried mint





Mix together. Refridgerate until ready to serve. Shake well before pouring.
Mixed greens


low fat feta cheese


dried cranberries


Low fat rasberry walnut dressing.





Yummy
Make this a few hour ahead if you can.....








Cucumber and Tomato salad.


3 cucumbers


3 vine ripe tomatoes sliced


1/4 cup salt





Peel cucumbers and cut length wise.Remove seeds with small spoon.slice and place in colander add salt and toss.place colander over large bowl and let ';Sweat'; for 2 hours.





Dressing


1/4 cup vinegar


salt and pepper to taste


3/4 cups oil


1 glove garlic minced


1 half small onion minced


1 tsp parsley





put vinegar in large bowl add salt and pepper.whisk until salt is dissolved .add remaining ingredients and blend well.add cucumbers and sliced tomatoes toss.
