Does any body have a very easy potato salad recipe?

Oh yeah and do you boil the potatoes with or without skin because I think my mom did it with skin...???Does any body have a very easy potato salad recipe?
I boil my potatoes with the skins, let cool just slightly and peel. If you wait till their cold, its harder to get the skins off. Then I dice them up. Add onions, sweet relish, mayo, mustard and mix. I also add salt and pepper to taste. If its still kind of dry, I take a couple tablespoons of may and add milk to it, mix it up and pour on salad, it helps to give it a creamy mix which makes it taste good. You really do add everything to your taste. You will know when you have it right. Good Luck!!Does any body have a very easy potato salad recipe?
I bake my potatoes of course with the skins on. Then wait for them to cool off. Cut them up and put mayo , a little milk and either minced onions or one small cut up fresh onion in it. Done. If you want you can put some hard boiled eggs in it, that's what I do. Season with salt and pepper.

Just a little note....NEVER use brown potatoes for potato salad. They tend to get mushy and mealy easily. Instead, go with red or yukon gold potatoes. They are a bit sturdier and they taste great.
My mom boils the potatoes w/skin on a day in advance...peels them the next morning....

* 1 ea small bag red potatoes


* 1/4 c finely chopped onion


* 1/4 c finely chopped celery


* 1 ea dill pickle finely chopped


* 2 T parsley flakes


* 6 ea strips bacon cooked crumbled


* 1 ts salt to taste


* 1/2 ts pepper


* 2 T red wine vinegar or balsamic vinegar


* 2 T vegetable oil


* 1 c mayonnaise


Peel and cube your potatoes and cook until fork tender - drain and cool. In a separate bowl mix all the dressing ingredients - taste as you go cause you might need more salt or vinegar. After the potatoes are cool, toss lightly so not to mash the potatoes.Sprinkle with bacon bits and chill.
Bacon Potato Salad:





Prep: 15 min., Cook: 18 min., Chill: 1 hr. Round white potatoes work well in this recipe. To lighten, use light mayonnaise and sour cream. To make ahead, peel and cut potatoes the night before, cover with water, and chill.





6 to 8 medium potatoes (about 3 pounds), peeled and cut into 1-inch cubes


1/2 pound bacon, cooked and crumbled


6 green onions, chopped


2 celery ribs, finely chopped


2 tablespoons diced pimiento, drained


3/4 teaspoon salt


1/4 teaspoon pepper


1/2 cup mayonnaise


1/2 cup sour cream


Garnishes: paprika, celery sticks





Cook potatoes in boiling water to cover in a Dutch oven over medium heat 15 to 18 minutes or until tender. Drain and let cool slightly.





Place potatoes in a large bowl. Add bacon, chopped green onions, and next 4 ingredients. Stir together mayonnaise and sour cream until blended. Pour over potato mixture, tossing gently to coat. Cover and chill at least 1 hour. Garnish, if desired.





Yield: Makes 6 servings
Dice red potatoes and boil until fork tender. Add chopped hard cooked eggs. You can also add pickles, olives, cherry tomatoes, bacon; anything that's easy and sounds yummy. Then mix the whole batch with a few spoons of creamy dressing...italian or ranch, something with strong flavor, and chill for a few hours. It's really a throw together by your own taste...have fun with it.
I don't do the skin-on kind. I peel and dice my potatoes, then boil them until they are fork tender. I drain them in the strainer, then let them cool.


I boil a few eggs until they are hard cooked, let them cool and chop them up too.


Once the potatoes are cool, I put the chopped eggs and potatoes in a big bowl, then add in a nice heaping of Miracle whip, a spoonful of regular Mayonnaise, some yellow mustard, chopped diced red and green bell pepper and chopped onions.


I mix all the ingredients up really well and sit it in the fridge so it will stay cold, then I serve it.
Here's the easiest recipe: Boil red potatoes with the skins on (you can peel or not after they're cooked) Chill them after they're done, cut in bite-sized cubes,, add chopped onion, chopped celery, mayonnaise, salt and pepper to taste. Delicious and no fuss. If you like, you can put a couple of eggs in with the potatoes for the last ten minutes of cooking and add the chopped eggs to your mixture for a different taste...more picnic-like.

Old-Fashioned Potato Salad Recipe


Refrigerate this potato salad recipe overnight for best flavor.


INGREDIENTS:


3 large potatoes, peeled


1 large Bermuda onion, sliced thin


1/4 cup olive oil


3 tablespoons vinegar


1 clove garlic, finely minced


1/2 teaspoon salt


1/4 teaspoon black pepper


2 tablespoons sugar


3 sprigs parsley, minced


PREPARATION:


Boil potatoes until soft, remove from water, and let cool completely. Slice potatoes into 1/4-inch slices. On a large serving platter, alternate sliced potatoes with sliced onion. In a small bowl, whisk together oil, vinegar, garlic, minced parsley, sugar, salt, and black pepper.


Pour mixture over potatoes and onions then toss lightly. Season to taste with additional salt and pepper; refrigerate. For best flavor, refrigerate overnight.


6 to 8 servings

Potato Salad


1 cup mayonnaise


2 tablespoons vinegar


1 1/2 teaspoons salt


1 teaspoon sugar


5 to 5 med. potatoes, peeled, cubed, cooked


1 cup sliced celery


1/2 cup chopped onion


3 eggs, hard-boiled


1 to 2 Tbs chopped green onions, optional garnish


1 tomato, cut in wedges, optional garnish


PREPARATION:


Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add remaining ingredients; toss gently to combine well. Cover; chill for 2 or more hours for best flavor. Garnish with chopped green onion and tomato wedges if desired.


Serves 6 to 8.
One of my friends uses the red potatoes, cooks them, I think she cubes a little after cooking, adds onion, mayo, sour cream, salt, pepper, %26amp; celery salt. That's it. I don't think she measures anything, just adds until you can see a slight dressing on potatoes %26amp; by taste.
