I have made taco salad so many times and i mean its good but i was wondering what recipes other people use. I just want to experiment with some new tastes..Taco Salad Recipes, need something new?
Seven Layer Taco Salad
A healthy taco salad with layers of lettuce, meat, beans, cheese, and more!
1 pound ground beef
1 small onion, chopped
1 small clove garlic, minced (or a sprinkling of garlic salt)
1 tablespoon water
1/2 teaspoon paprika
1 teaspoon chili powder
1/2 tablespoon ground cumin
1/8 teaspoon ground black pepper
1 teaspoon salt
Tapatio hot sauce (or hot sauce of your choice), to taste (I like about 2 teaspoons of Tapatio -- this really adds a great flavor!!)
1 can (15 ounces) dark red kidney beans, rinsed and drained
1 large head iceberg lettuce, shredded or chopped
2 cups torn fresh spinach leaves, optional
2 cups Fritos (or other small yellow corn chips)
2 cups (8 ounces) shredded cheddar cheese
3 cups fresh diced tomatoes
1 cup sliced black olives (drained)
sour cream, for serving
Brown ground beef with onion and garlic. Drain well and return to pan.
Add water, paprika, chili powder, cumin, pepper, salt, hot sauce, and beans. Cook and stir over medium-low heat until hot.
Mix lettuce and spinach together.
To serve salad, layer each platter or plate with a thick layer of the lettuce mixture.
Top with a small sprinkling of corn chips.
Add a layer of the meat and bean mixture, and top with shredded cheese.
Add a decent layer of tomatoes,
sprinkle with sliced black olives, and dab with sour cream. Enjoy! :)
This is a delicious, well-balanced full-meal salad! Since there are substantial amounts of greens and tomatoes, it really does have a ';salad'; feel with a great taco taste!!
I like the meat to be fairly spicy, so that it adds plenty of flavor to the salad -- don't skip the hot sauce (Tapatio really is the best kind in our opinion!) because it adds the ';zing'; that plain old chili powder, pepper, or cumin can't fully compensate for. ;)

CHIPOTLE CHICKEN TACO SALAD
1/3 cup chopped fresh cilantro
2/3 cup light sour cream
1 tablespoon minced chipotle chile, canned in adobo sauce
1 teaspoon ground cumin
1 teaspoon chili powder
4 teaspoons fresh lime juice
1/4 teaspoon salt
Salad:
4 cups shredded romaine lettuce
2 cups chopped roasted or grilled skinless, boneless chicken breasts** (see marinade recipe below)
1 cup cherry tomatoes, halved
1/2 cup diced peeled avocado
1/3 cup thinly vertically sliced red onion
1 (15-ounce) can black beans, rinsed and drained
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
To prepare dressing, combine first 7 ingredients, stirring well.
To prepare salad, combine lettuce and remaining ingredients
in a large bowl.
Drizzle dressing over salad; toss gently to coat.
Serve immediately.
Do your basic thing....lettuce tomato, onions, cheese, and add weird things:
I like to add drained and rinsed black beans, as well as frozen corn, unheated, and I also like pico de gallo in it. Depending on the other ingredients, you might like fruit...mango, melon, peaches.
Add fresh cilantro.
Add a different dressing, such as avocado ranch (green sauce).
You can also switch out the meat. If you always do hamburger taco meat, you can use ground turkey (healthier but basically the same taste) OR you can use chicken or pork.
You could try experimenting with fresh chilies or tomatillos -- either in a salsa or just tossed on. They add varying levels of spice and tang to the salad. I personally love black olives too. I prefer the texture of grilled or shredded chicken or pork over ground beef. I season with cumin, garlic salt, cayenne, and cilantro. A little bit of sweet corn and sour cream and you've got one of my favorite meals!

flavor your taco shell with a little lime juice, salt and red pepper flakes
