What is a good and easy to make pasta salad recipe?

I want to make some pasta salad for my sister's luau themed graduation party. I don't want a creamy-mayonnaise one. Just a simple italian dressing type recipe. Thanks!!What is a good and easy to make pasta salad recipe?
Luaus usually have a mayo based macaroni salad, but you might try this.

Pizza Pasta Salad





3 cups penne pasta, cooked, drained and cooled


4 tomatoes (1-1/2 lb.), chopped


12 slices OSCAR MAYER Hard Salami, chopped


1 cup KRAFT Natural Italian* Cheese Crumbles


1/2 cup sliced fresh basil


1/2 cup KRAFT Grated Parmesan Cheese


1/2 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing


TOSS all ingredients in large bowl; cover.

I think that for a luau, you'd want an Asian Salad. Here is one for you to look at. There is also an Italian dressing recipe that follows, but think about the Asian-Style, I think it would go really well. Enjoy! %26lt;3





Spicy Asian-Style Pasta Salad





Ingredients:


1 pound linguine, broken in half


4 tbs. Oriental sesame oil


3 tbs honey


3 tbs soy sauce


3 tbs balsamic vinegar


1/4 tsp cayenne pepper


3 red bell peppers, seeded, thinly sliced


3 cups snow pea pods


1 large red onion, thinly sliced


3/4 cup honey-roasted peanuts, coarsely chopped


1/2 cup chopped fresh basil





Preparation:


Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Rinse and drain very well. Transfer to large bowl.


Whisk 3 tbs. sesame oil, honey, soy sauce, vinegar, and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta.


Heat remaining 1 tbs. Oil in heavy large pot over medium-high heat. Add bell peppers, snow peas, and onion and saut茅 until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil, and enough dressing to coat. Serve, passing any remaining dressing separately. Yield: 8 servings.





Feta Lemon Penne Salad


This fresh pasta salad with tender spinach, fresh herbs and bright lemon is a super choice for your next meal of chicken or fish.





Ingredients:


8 cups Water


1 tsp. Salt


1 1/2 cups Penne pasta


2 cups Chopped fresh spinach leaves, lightly packed


1/2 cup Crumbled feta cheese


2 tbsp. Chopped fresh basil


1 tbsp. Grated lemon zest


2 tbsp. Capers (optional)


1/4 cup Italian dressing





Preparation


Combine water and salt in large saucepan or Dutch oven. Bring to a boil. Add pasta. Boil, uncovered, for 14 to 16 minutes, stirring occasionally, until tender but firm. Drain. Rinse with cold water. Drain well. Transfer to large bowl.


Add next 5 ingredients. Drizzle with dressing. Toss. Makes about 4 cups
-First cook up some rotini or fusilli pasta, drain it, rinse it with cold water and put it in the fridge.


-Then cut up a variety of vegetables. I use carrots, celery, different colored peppers (red, yellow, green), cucumbers, broccoli, cauliflower--whatever you want.


-Toss everything together with some Greek salad dressing and crumbled feta cheese. Chill it in the fridge for a little while before you serve it.


I prefer the oil-based dressings like Greek or Italian. I like the taste and texture, and it keeps a lot better. There's usually enough left over to take some to work for lunch the next day.
Salad...


Cherry tomatoes- chopped in half


Red onion- finely diced


Baby Spinach and rocket leaves


Cooked Pasta


Baby boccocini


Kalamata Olives


Spicy thin shaved pepperoni





Dressing....


Balsamic vinegar


Good quality evoo.


Dried Oregano.


Good quality sea salt to put in the dressing.





Combine according to taste. You can leave out a few salad ingredients if you don't like or don't have them. Well, except the passta of course.
I just fry a green chili with garlic and onions in some extra virgin olive oil until browing, then add some mushrooms and fry until all done.


Then add some chopped ,ripe fresh tomatoes and cook on a low heat until they have cooked right down. Season with salt and ground black pepper.





I then add all this with a bit more olive oil to cooked pasta.


I like wholewheat fuselini.





When it's cool , add some torn up basil leaves.





The tomatoes make a kind of juicy dressing , I cook it until they've almost but not quite cooked down.








You can add ham if you want or fry chicken with the onion stage for a meat version.





It's healthy and tasty, got or cold.
Use rotini macaroni,regular or tri colored you can add sliced black olives,diced red and green peppers,onions,use oil and vinegar,salt pepper and a little oregano and basdil and it tastes great.Also sprinkle in a little parmesan cheese.
