Suggestions for a cool and different salad recipe?

My favorite is lettuce goat cheese and strawberries with poppyseed dressing but i want to try something else. im gluten free so nothing with cruncy noodles or anything like thatSuggestions for a cool and different salad recipe?
I love rice salad- and these are gluten free- serve in lettuce cups etc and they are so delicious

Rice Salad





Ingredients:


1 cup rice


1 cup chopped celery


1/2 cup chopped onions


1/2 cup canned peas


1/2 cup canned corn





Dressing


1/4 cup oil


1 tablespoon soy sauce


1 teaspoon curry powder


1 teaspoon sugar


1 teaspoon vinegar


1/3 cup almonds, chopped





Steps:


1. Cook 1 cup of rice in slightly salted water.





2. Cool.





3. Add the vegetables.





4. Mix together and add the dressing ingredients.





5. Mix and refrigerate for at least 1 hour.





6. Just before serving, add almonds

- (cooked in chicken broth)


1/2 c Chopped fresh tomatoes


2 Jalapeno peppers; minced


2 tb Red wine vinegar


1 tb Vegetable oil


1 ts Snipped fresh cilantro


-OR- parsley


1 Garlic clove; minced


1/2 ts Basil


1/4 ts Crushed thyme





Combine rice, tomatoes and peppers in medium bowl. Whisk remaining


ingredients in small bowl; pour over rice mixture. Chill 2 to 3 hours so


flavors will blend. Stir before serving.

or try a thai style salad ,





rice , toasted coconut, dried shrimps ,fresh corriander, a squeeze of lime , a dash of fish sauce and some red chilli if you like it spicy.

4 cups cooked rice (brown or white)


1 can rinsed black beans


1 can corn


1 cup salsa


1/2 cup mayo


1/2 cup chopped clantro

Greek salad is my favorite it has feta cheese, olives etc.

INGREDIENTS





* 1 head romaine lettuce- rinsed, dried and chopped


* 1 red onion, thinly sliced


* 1 (6 ounce) can pitted black olives


* 1 green bell pepper, chopped


* 1 red bell pepper, chopped


* 2 large tomatoes, chopped


* 1 cucumber, sliced


* 1 cup crumbled feta cheese


* 6 tablespoons olive oil


* 1 teaspoon dried oregano


* 1 lemon, juiced


* ground black pepper to taste





DIRECTIONS





1. In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.


2. Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.
Try shredding up some lettuce and tossing it with some grated carrot. Then chop up some pineapple into bite-sized pieces and add to the salad. If you like, add some chicken kebabs which have been de-skewered. The chicken should have a tasty marinade, one which you might be using often or enjoy the taste of. Toss all the ingredients together and serve.





You can add a french or meditteranean dressing if you like, but the chicken marinade and pineapple should provide an interesting dressing.
A favorite summer salad recipe of mine is Watermelon Spinach Salad. Sounds totally weird, but isn't. This recipe makes a lot, so just cut down on the proportions if you're just doing it for yourself. Toss all ingredients together.





1 bag (10 oz, I think) baby spinach leaves


1 bag spring mix salad


2 green onions, chopped


2 small cans mandarin oranges, drained (optional)


3 cups cubed watermelon (bite size)


1/3 cup sliced almonds (optional)


Commercial raspberry vinaigrette, enough to lightly coat most of the salad (sorry, I never measure this and I can't remember how much it's supposed to use. 1/4 cup, maybe? Dressing amount would be to your taste, anyway.)
About 3 oz baby spinach


1 red apple sliced thin


1/2 cup red grapes cut in half


1/4 cup buttermilk


2 tbsp sour cream


1 tbsp apple cider vinegar


1 tbsp honey





Mix the butter milk, sour cream, vinear, and honey. Pour over spinach apples and grapes, toss and serve. This is really good even if you have left overs at the end of the night.





The dressing would also be good on a fruit salad of apples, grapes, banans, cantelope, oranges, strwberries et....
I love proscuitto, mozzarella and peach salad.





Ingredients are for 4 people


4 very ripe peaches


8 slices proscuitto


1 lg buffalo mozzarella ball


4 handfuls gourmet salad leaves bitter red, green, rocket etc


Handful of mint


Fresh Lemon juice 6 tablespoons


Olive oil 1/3 cup


Salt and pepper to season





Halve and deseed peaches then break up roughly


Rip up proscuitto into bite sized pieces


Breakup large mozzarella ball roughly


Mix the salad leaves and mint (leaves only) with the above ingredients.


Mix lemon juice, olive oil, salt and pepper to make dressing.


Pour dressing over just before serving.
You might want to try this:








MARINATED VEGGIE SALAD


1 lb. can French style green beans


1 lb. can small peas


1 lb. can white corn


1 - 4oz. jar pimento (chopped)


1 cup shopped onion


1 cup chopped celery


1 cup chopped green pepper


1 cup sugar (I used artificial sweetener)


2/3 cup vinegar (I used red wine vinegar)


1/2 cup cooking oil


1 tsp. salt


1 tsp. pepper





1.)Pour green beans, peas, corn %26amp; pimento in a colander to drain over a


large bowl. Discard 1 1/2 cups of liquid.


2.)Put veggies in a large bowl and fold in onions, celery and green


peppers.


3.)Mix together thoroughly the remaining ingredients and toss with


veggies.


4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)
Here's my favorite sweet sour dressing recipe: 1/4 c. oil, 3 tbsp. sugar, 2 tbsp. vinegar, about 1 tbsp. parsley, a few dashes hot sauce, about 1/2 tsp. salt, a dash of pepper. Stir or shake until blended. Also great with a little ground ginger in it for variety.





We love it on lettuce with mandarin oranges, green onions, and surgared or roasted almonds.





Or leave out the parsley, and pour it over this: combine broccoli florets, some raisins, red onion, sunflower seeds and bacon bits.

Can you have rice? Take some leftover rice and add what ever veggies, chopped cooked meat, ect you want and toss it with your favorite dressing. Serve it on its own, or in lettuce cups. Yummy and easy!





My fave salad, though, is romaine lettuce, mandarin oranges, ruby red grapefruit segments, slivered almonds, and a dressing made from the ruby red grapefruit juice, a little olive oil, and salt and pepper to taste. Sometimes I add a little of the mandarin orange juice and a splash of balsamic vinegar.
