Greek Salad


adapted from my own recipe, by mistake





1 large head Romaine Lettuce


1/2 half red onion, sliced


1 English Cucumber, sliced


1 cup Kalamata olives


1 cup Greek Feta, crumbled





Dressing:


1/2 cup olive oil


3 tbsp red wine vinegar


1 tbsp fresh lemon juice


1 tsp dried oregano


1/2 tsp salt


freshly ground pepper





1. Place lettuce in a large bowl.





2. Mix dressing ingredients in a bottle and give it a good shake.





3. Toss lettuce with about 1/2 the dressing.





4. Place remaining salad ingredients on top of lettuce, and drizzle with some more dressing.

and this is my adaptation of a kraft based recipe


Easy Creamy Pasta Salad





Total Time: 3 hr 30 min


Makes: 20 side dish servings, or 8 or so, main dish servings





* 1 (16 ounce) package fusilli pasta,Or substitute Tri-Color Rotini


* 1 cup frozen petite peas, thawed


* 1Cup Frozen Baby Carrots , thawed


*1 2ounce can sliced black olives, rinsed


* 1 medium Cucumber


* 1 cup Genoa salami, can also use Hard Salami sliced in Pizza-Like wedges


* 3/4 cup chopped red onion


* 3/4 cup diced celery


* 1 (.7 ounce) package dry Italian-style salad dressing mix


* 1 cup Kraft real Mayonaise mayonnaise


* 1 cup sour cream


* 2 tablespoons milk





Directions


1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.


2. In a medium bowl combine mayonnaise, sour cream, milk and Italian dressing mix. Whisk together until smooth, set aside.


3. In a large salad bowl combine cooked and cooled pasta, peas, olives, salami, green onions, celery and parsley. Mix in dressing last, reserving 1/2 cup. Let sit over night in fridge. Stir before serving. Add extra dressing if pasta appears dry.








This is wonderful as a side dish or main course for hot summer evenings. Even my kids who don't care for ';salad dinners'; love this. Even better the next day.

GREEK SALAD FROM CRETE





1 green pepper, deseeded, sliced in rings


1 red onion, finely sliced


1 medium cucumber, sliced


3 medium or 2 large ripe tomatoes, cut in thin wedges


2 oz (handful) ripe (black) kalamata olives, pitted


6 or 7 oz slice of feta cheese


1/2 fresh lemon or juice


extra virgin olive oil (greek from Crete, if available)


fresh oregano or thyme leaves


salt and pepper





In a large flat salad dish, or plate combine sliced vegtables with olives and tomato wedges. Lay slice of feta on top and drizzle with olive oil, squeeeze lemon over that and sprinkle with oregano or thyme and salt and pepper. Alternately, the feta can be cubed or crumbled.


In Crete, the salad is often accompanied by an Italian or French type baton of bread which is used to mop up the leftover olive oil.
Greek salad is made WITHOUT letuce.





2 tomatoes cut in wedges


1 cucumber sliced


1 green pepper sliced


1 med. onion sliced thin


some olives - any kind, preferably with the pit in


cappers (if you have any)


Feta cheece cubed


Olive oil (virgin)


1 spoon of vinegar


dried oregano - salt - pepper.





Mix and serve
INGREDIENTS

METHOD


Cut the tomatoes, the onion and the cucumber in slices. Mix them, add salt and some pieces of feta cheese, oregano and at the end pour some olive oil.
Chicken pasta salad


2 cup diced chicken


4 cups cooked tri colored cork screw pasta


1 cup shredded cheddar cheese


1 red onion chopped


1/2 cup sliced black olives


1 tomato chopped


broccoli floret es blanched and separated


1/2 cup Italian dressing


1/2 cup ranch dressing


mix all ingredients together


whip together dressing and toss salad





Greek Chicken Salad


1 cup diced chicken


1 cup feta cheese


1 cup slied black olives


1 cup slice grape tomato's


1 cup diced cucumbers


1/2 cup red onion


3 cups cooked Teri-color roting pasta chilled





Dressing


1/2 cup olive oil


1/2 cup white wine vinegar


1 tsp lemon juice


1 tsp dried oregano


1/2 tsp salt


combine pasta, chicken, vegetables, cheese and olives


mix wet ingredients and toss until coated, chill until ready to serve.
My favourite pasta salad is pasta, any fresh veges steamed and chilled, tossed with fresh green herbs and mint vinaigrette which is easily made with 2/3 olive oil, 1/3 white wie vinegar, truckloads of fresh mint, fresh ground black pepper, a little flakey seasalt, and a little brown sugar or honey all thrown in a blender and blitzed. Always taste the salad before serving as pasta drains the flavour big time and you will generally be best to reseason before serving - add more salt
Ingredients


6 cups water


1 pound large shrimp


1/2 cup Caesar dressing


2 teaspoons sun-dried tomato sprinkles


3/4 teaspoon dried rosemary, crushed


5 cups cooked penne (10 ounces uncooked tube-shaped pasta)


3/4 cup thinly sliced cucumber


1/3 cup chopped fresh basil


1/4 cup chopped pitted kalamata olives


1/4 cup sliced red onion, separated into rings


1 (7-ounce) bottle roasted red bell peppers, drained and cut into strips


3/4 cup (3 ounces) crumbled feta cheese


1/4 teaspoon freshly ground black pepper


Chopped fresh parsley (optional)








Preparation


Bring 6 cups water to a boil in a large saucepan. Add shrimp; cook 3 minutes or until done. Drain and rinse with cold water. Peel and chill shrimp.


Combine shrimp, dressing, tomato sprinkles, and rosemary in a large bowl. Add pasta and next 5 ingredients (pasta through bell peppers); toss gently to coat. Cover; chill 1 hour. Sprinkle with cheese and black pepper. Garnish with chopped parsley, if desired.
