Potato Salad Recipe question?

The cafeteria at work makes an excellent potato salad that is mashed potato based as opposed to mayo based. It has eggs, celery, and chives in it too. Anyone have a recipe like this? They make it in too large of a batch to scale down for me.Potato Salad Recipe question?

GREAT AMERICAN POTATO SALAD





1 cup mayonnaise


1/8 teaspoon pepper


2 boiled eggs, chopped


1/2 cup pickles, chopped


1/2 cup celery, chopped


1/2 cup onions, chopped


1 teaspoon mustard


2 teaspoon salt


4 cup potatoes, cubed or mashed





Mix mayo, mustard, salt and pepper in a large mixing bowl. Add remaining ingredients; mix lightly.
Here's my recipe: potatoes, eggs, celery, onion, green pepper, salt, pepper and the secret ingredient is ..........Marzetti's coleslaw dressing. It makes the best potato salad ever.
boil 5 potatoes %26amp; 2 eggs. Let all cool. Peel your potatoes, and eggs, add together with mustard, mayo, olives, onions, celery, s%26amp;p, and pickles cut up (or sweet relish)



Boy, I don't know that does not sound good...I know about 10 or more ways to make potato salad but that just sounds gloppy. Or do they sprinkle the other ingredients on top?
