I got this in a cooking class...it is wonderful! Take the recipe...everyone will ask for it!
Creole Potato Salad
3 lbs red skinned pot (you don't have to peel them)
6 large eggs, hard boiled, peeled and chopped
1 bunch scallions chopped
4 stalks celery, chopped
juice of 2 lemons
1/2 cup dill pickles...finely chopped
1 cup good mayo no miracle whip
2 T cream style mustard (hot dog style..plain old yeller)
1 tablespoon horseradish
1 tablespoon Course salt
2 teaspoons black pepper
2 teaspoons cayenne pepper
Cook potatoes whole starting in COLD water and cover. (I didn't
realize there was a difference. Since potatoes
are stored cold and in the dark they really taste better and cook
different if started out cold and covered. I always did this ...but we
did it both ways...the texture in the potatoes was really different.)
Check the Potatoes. (run under cold water to stop the cooking process)
When cool enough to handle, cut into medium sized pieces. Add rest of
ingredients and mix well. Refrigerate.What is the best potato salad recipe?

Tawana鈥檚 Potato Salad
5 pounds of potatoes - I used red bliss
Diced celery - as much as you want
A little chopped onion (I use a little onion powder instead)
One jar of Duke's sandwich spread (MUST be Duke's)
Salt and pepper to taste
Mix all together and enjoy.
PS: You can add chopped boiled eggs, but my husband doesn't like this. I also
add a bay leaf to the water when I boil the diced potatoes.
Potatoe Salad
Boil 2-3 lbs of reg. potatoes w/skins
boil 6-8 eggs
miracle whip
2-3 tsp sweet relish
a couple of squirts of regular mustard
large onion chopped
fresh celery 1 stalk cut up small and 1 tsp. celery seed
salt and pepper to taste
sugar to sweeten
paparika to garnish (optional)
Cool potatoes and eggs to handle.
Peel the skins off potatoes cut into cubes in a large bowl (not too fine to make it mushy)
chop eggs add salt, celery seeds and pepper.
Put all other ingredients into same bowl and mix together.
I sprinkles a couple dashes of sugar when done.(miracle whip and sweet relish maybe all you need) and mix it up to give it a better taste.
Garnish with papirika and chill.
Best when made the night before serving.

5 lbs. all purpose potatoes
l large onion - peeled and diced
2 cups (or more) Hellmann's Mayonnaise
l/4 cup vinegar
l/4 cup oil
l/2 tsp. dry mustard
3 or 4 hard boiled eggs chopped
2 stalks celery - diced
2 Tbls. parsley - chopped
salt and pepper
paprika
Optional: l/2 cup sweet pickle relish
Boil potatoes in their skins until soft and you can pierce them with a fork.
While potatoes are boiling - dice
up the onion, celery, chop the parsely and hard-boil the eggs.
Note: For boiled eggs, put the eggs in a pan with cold water and bring to a boil. As soon as they boil, shut off the heat, cover and let stand 18 minutes and they are done. Immediately run them under cold water and the skins will slip right off!
When potatoes are done, cool them awhile and then peel them. Put them into a pot and pour over the vinegar and oil and sprinkle generously with salt and pepper.
Add the chopped parsley, diced celery, diced onion, relish, dry mustard, chopped hard-boiled eggs and the Mayonnaise.
Mix thoroughly. If too dry add more Mayo.
Arrange nicely in a pan and garnish with parsley and sprinkle with paprika

5 lbs potatoes peeled,diced small and boiled
3 cups miracle whip
1/2 cup mustard
2 small onions diced small
3 celery stalks small diced
1 small green pepper small diced
6 boiled eggs diced
1 cup sugar
1 cup sweet pickle relish
Make sure potatoes are cold before you mix

4 medium baked potatoes, chilled, peeled and cubed
1 T. lemon juice
2 hard boiled eggs, chilled, peeled and chopped
3/4 c. mayonnaise
1/4 c. yellow mustard
1/4 t. dried dillweed
1 1/2 t. salt
1/2 c. chopped celery
1/3 c. chopped onion (I use purple onion for color)
3 T. milk
1/4 t. pepper
2 t. dried parsley (optional)
Mix all together. Lightly sprinkle paprika over top. Cover and chill several hours before serving. For additional color and flavor, core and chop 1/2 of each green, red and yellow bell pepper. Not everyone likes bell pepper, so sometimes I include, most times I don't.
Potato Salad is one of those very versatile dishes that you can add to, take away from and create a dish that suits your tastes.
Loaded Baked Potatoe Salad
Ingredients
8 potatoes, cubed (half peeled or half with skin)
2 teaspoons salt
6 slices bacon, diced %26amp; crisp cooked
6 green onions
2 cups cheddar cheese, shredded
16 ounces sour cream
1/4 teaspoon pepper
1 cup Miracle Whip
Directions
1 Cube and boil potatoes with salt.
2 Drain.
3 Crumble bacon and slice onions (including tops).
4 Combine sour cream, pepper and Miracle Whip.
5 Add to potatoes.
6 Add bacon, onions and cheese (reserve some of each for top).
7 Mix with potatoes.
8 Pour into baking dish.
9 Top with reserved cheese, onions, and bacon.
10 Bake 350 for 10-15 minutes (until cheese melts).
Boil your potatoes until soft. Let them cool.
Slice them into pieces that your prefer
Boil you eggs and let them cool. Peel them and slice them. I try to keep the yolks as intact as I can.
Take hamburger dills and chop them into small pieces. Add hydrated minced onions.
Now heres the secret. Take prepared yellow mustard, mayo or miracle whip and pickle juice. The secret is you mix it to YOUR taste. If you like a lot of spicy, put more mustard, the same with the other 2 ingredients. Its what you like. Add this to the potato, pickles, eggs. Sprinkle with seasoning salt and celery seed. Mix well and chill.
Remember, make any recipe with ingredients you like and it should come well.
well my makes her this way-
red potatoes about 6 cooked and diced
minced celery 1-2 stocks
minced red onion about 1/4 cup
(dill pickles minced about 2 TBS) OR (2-3 TBS pickle juice)
1-2 TBS sugar
salt %26amp; pepper
1/2-1 cup best foods or helmens mayo
wisk every thing then add the the -potatoes (be slighty warm so they absorbe the flavor)
the combo is sweet and sour taste that equles the taste out.
POTATO SALAD
