the type of pasta is the secret - try rotini looks like screws or try pinwheels - then add stuff you know they like and can identify like peas chopped eggs carrots and a little mayo salt to taste and viola (if you can get kids to help you then they have ownership of it and will eat even more of it
I like pasta salads with ';no fat'; vinaigrettes, red wine, balsamic, etc... I also really like to use bow tie pasta. I just get veggies I like, all colors of Bell peppers, cucumbers, carrots, anything really and mix it up with the vinaigrette and pasta. I put it in the fridge for a while and then it is ready to eat. You can also put on pepper, salt, Parmesan, etc... The kids love it and it is healthy.

This is our favorite!
Cook One 16 0z box of rotini pasta, The three color type looks best, dont over cook. Rinse in cold water, drain and chill while You prepare the other stuff. all amounts are to taste.
A bunch of grape size tomatoes cut in half.
Black olives sliced.
Shredded carrots.
Diced celery.
Shredded cheddar cheese.
Parmesan cheese.
Mix all ingredients, just toss in as much as looks good. Then coat well with a good bottled Italian salad dressing. Ceasar is very awsome. Chill for about an hour, and test flavor, You may want to add more parmesan and salad dressing.
Everyone will love this.
Check Martha Stewart and her kids margarita's. Of course these are alchohol free. I saw it on her show. Just don't remember the guest that made em.
Pasta Salad recipe
1/2 package Pasta your choice of shape
8 oz Pepper Cheese cubed
1 medium Bell pepper sliced
1 small Onion chopped finely
1/3 Cucumber sliced
1/4 cup Apple Cider Vinegar
1/2 package Cherry tomatoes halved or quartered
2 large teaspoons Garlic chopped
1 small can Black olives sliced2 teaspoon Dill
1 package Cubed ham or turkey
Boil pasta until cruncy tender and drain.
While pasta is boiling add a soupscoup of boiling pasta water, apple cider vinegar, dill and garlic to a big bowl.
Add the drained pasta to the bowl and turn. Let this mixture sit until it's either cold or the pasta have soaked up the liquid in the bowl. It does not hurt the dish if there's some leftover liquid.
While the pasta is cooling and soaking up the liquid chop, slice, dice and drain the remaining ingredients and add to the pasta and mix well.
Can be eaten as is or served with garlic bread.
