my granddaughter and I just made a delicious salad! Neither of us has ever used a recipe for salad.
some dark green lettuce stuff
half a small jicama diced
shredded red cabbage
slivered red onion
half a small head of cauliflower
saute 4 ounces sliced mushrooms in 2 tablespoons butter
season with 1/2 teaspoon parsley, 1/2 teaspoon chives, 1/4 teaspoon garlic bits.
toss all together and enjoy.
My very favorite is Chinese Chicken Salad, done with maifun (not chow mein noodles) ... I also like Greek Salad - Spinach Salad - Fajita Salad. I like chopped salads too. What I DON'T like is a wedge of iceberg lettuce, or just some cut-up lettuce, with tomatoes %26amp; cucumbers on it - too boring

Tired of the typical mayonnaise style potato salad?
Try a lighter German potato salad ....
Most people recognize German potato salad served warm with a sweet and sour bacon dressing. The German Immigrants to the United States made this style of potato salad that was warm and tossed with a vinegar dressing that was flavored with bacon drippings and onion so people began calling it Hot German potato salad. There are versions that just use a vinaigrette dressing and are tossed and served cold. There are other goodies that you can add to your potato salad also to make it unique.
As a Salad....
You can serve this hot or cold.
As a side dish....
as an alternative to mashed potatoes, or a baked potato you can serve a Hot German potato salad with anything from a steak to grilled Ahi Tuna.
As a Main DIsh...
you can add slices of beef or chicken to this and other vegetables and turn it into a nice entree.
What makes a good German Potato Salad?
The Potato
Any potato works well but it is good to understand the qualities of each potato to their advantage in your salad.
Many Germans like the frim red skin potato but the russet works well as also.
The Dressing
The typical dressing is a very simple vinaigrette that is equal parts water, vinegar and sugar. However all vinegars are a bit different so you need to do some experimenting. Rice and distilled vinegars are milder, but a cider vinegar works well also. Too strong a flavored vinegar like a tarragon vinegar may hide the flavor of the bacon and onions. If the dressing is too strong just add a bit more water.
If you are making a cold German potato salad a simple vinaigrette will work well.
The Bacon
The secret of getting that yummy flavor to your Hot German potato salad is using a bit of the bacon fat in your dressing. This is accomplished easily by frying the bacon up and then adding the onions and potatoes in the same pan.
The Onion
The onion for a Hot German Potato salad needs to be cooked which sweetens it. . Raw onion just doesn't give the same flavor.
