Try this:
Lemon Vinaigrette: Juice one lemon into container, straining the seeds. Add about 1/4 cup extra virgin olive oil and salt and pepper to taste. Shake well to combine. This is good on salads, but equally good on steamed vegetables for side dishes.
or
Cesare Salad Dressing: Add to food processor, blender or container wide enough for your hand blender - 1 egg yolk, 1 tablespoon Dijon mustard, 1 garlic clove (crushed), 1 sardine (optional), 3 tablespoons extra virgin olive oil, 2 tablespoons grated Parmesan cheese, salt and pepper to taste and the juice of 1 lemon. Process until smooth and creamy. Cesare salad is traditionally served with romaine lettuce, croutons, shaved Parmesan cheese and fresh ground black pepper.
Everyday Herb Vinaigrette (Makes 1/3 cup)
2 tbsp vegetable oil (Olive is good)
2 tbsp lemon juice or vinegar (cider vinegar or red wine vinegar is tasty)
1 tbsp water (optional - use for a lighter flavour)
1 garlic clove minced (optional)
1 or 2 tsp mustard (Dijon flavour is good)
2 tbsp mixed fresh chopped herbs (or 2 tsp dried) - basil, parsley, dill etc.
Pinch salt and pepper
Add all ingredients to small screw cap jar and shake well.
I found this recipe online the other day...I wanted something citrus based to go with my chicken enchiladas and it's awesome! I use less oil as I'm rather weight conscience...Hope you like it as much as I did!

Well you have oil and vinegar so just add what spices you like and shake. I use to make salad dressing out of miracle whip or mayo and add a little bit of french dressing and a lot of paprika. It really taste good on cole slaw.
