Whats a good potato salad recipe?

and what would it go good with other than grilling something?Whats a good potato salad recipe?
one medium sized red potato per person


quarter and boil til just tender (no need to peel the skin)





chopped celery


chopped green onions or chives





approximately 3-5 hard boiled eggs, diced





a small amount of either yellow mustard or grey





enough mayo to taste





salt, pepper, paprika to taste





add in either some sweet relish or green tomato relish (some folks like the dill pickles)





mix this up to the consistency you like





also can top with sliced green olives and more paprika for coloring





My family usually has this with the usual bbq or even with a baked ham.. sometimes just serve along side a nice sandwich.. either way potato salad is a good side.Whats a good potato salad recipe?
When I make mine, I just use bolied potatos, dill relish, mustard, mayo, boiled eggs, salt and pepper.


But I am a HUGE fan of NJ style heres a good one!








Potato Salad ';New Jersey'; Style Recipe














2 pounds Yukon gold potatoes


3 hard boiled eggs, finely chopped


1/2 cup mayonnaise


1/2 medium yellow onion, finely diced


2 stalks celery, finely diced


Kosher salt


Freshly ground black pepper


Sugar, to taste





Boil potatoes in skin and let cool. Slice into quarters. Add eggs, mayonnaise, onion, and celery and fold together. Season to taste with salt, pepper and sugar.

2 pounds deli potato salad


2 tablespoons diced jalapenos (recommended: La Victoria)


1 teaspoon Mexican seasoning


6 dashes chipotle pepper sauce (recommended: Tabasco)


1 scallion, chopped


1 tablespoon finely chopped fresh cilantro leaves





In a large mixing bowl, combine all ingredients. Cover and refrigerate 1 hour for flavors to meld. Serve chilled.

For the vinaigrette:


1/2 cup finely minced red onion


3 tablespoons Dijon mustard


3 tablespoons red wine vinegar, divided


1/2 teaspoon sea salt


Freshly ground black pepper


1/2 cup extra-virgin olive oil


1 teaspoon finely minced fresh tarragon leaves


2 pounds Yukon gold potatoes, skin on, cut into 1-inch chunks


2 cups diced tomato, skin on, including seeds and juice





For the vinaigrette:


In a bowl, whisk together the onion, mustard, 2 tablespoons of the red wine vinegar, salt and pepper. Gradually whisk in the olive oil and then add the tarragon.


Put the potatoes in a large pot of cold, well-salted water to cover. Bring to a boil, adjust the heat to maintain a gentle simmer, and cook until tender when pierced, about 15 minutes. Drain well and transfer to a large bowl or sheet pan to cool slightly. Sprinkle with 1 tablespoon red wine vinegar.





Add some of the vinaigrette to the potatoes and toss; you may not need it all. Add the tomato and toss again. Taste and adjust the seasoning. The salad may need more salt.

2 (10-ounce) bags olive oil potato chips (or good quality chips)


2 tablespoons smoked paprika


1 tablespoon garlic powder


1 teaspoon sugar


1/2 tablespoon salt





Preheat oven to 300 degrees F.


Place chips on an oven tray and bake for about 5 minutes until they are hot and they begin to release their oil.





While chips are in the oven mix together the paprika, garlic powder, sugar and salt.





When the chips are hot, sprinkle the spice mixture over them and carefully toss to season all of the chips. (Be careful of the hot tray.)





Serve warm or at room temperature.
Best ever potato salad,my mom caters this salad !!





2 1/2 pounds red potato's - Add 1/4 cup salt (you need that to give the potatoes taste) boil with skins on,peel when cold


boil 6 eggs - boil 3 mins. turn off heat,cover for 10 mins. cool in cold water.


Mix up 1 1/2 to 2 ups Miracle whip


1/4 cup prepared mustard


1 tsp of salt


1full level teaspoon of pepper, (it is a must),that's the secret for good salad


1/2 cup sugar - I use sugar sub., 5 pkgs. (if it is to sweet for you,add some more mustard,or add more sugar if to bitter)


1/2 cup minced onion





Cut up cold potatoes,cold eggs,then pour the mixed dressing over the potatoes and eggs,cool for 5 hours,then eat the best potatoe salad ever !!





As far as something that goes with potatoe salad,I make meat loaf,,hamburgers,hot dogs,fish sticks,pork chops,anything really.


You can also use this salad dressing mixture for making macaroni salad too,instead of potatoes and eggs,cook 2 cups macaroni,I use either tuna or Jenny-O turkey ham, You can add green pepper,celery ,radish,and I like to add cut up cheddar cheese,what ever you like,it's all good !
INGREDIENTS


5 potatoes


1/4 cup and 1 tablespoon low-fat mayonnaise


1/4 cup and 1 tablespoon bacon ranch dressing


5/8 onion, chopped


2-1/2 stalks celery


2-1/2 green bell pepper, chopped


salt and pepper to taste





Bring a pot of salted water to boil, place potatoes in water. Boil until potatoes are tender. Drain well. Let the potatoes cool 30 minutes.


Peel the skin off of the potatoes and cube them.


In a medium size mixing bowl combine potatoes, mayonnaise, ranch dressing, onion, celery, green pepper, salt and pepper. Cover and refrigerate until well chilled.





Garlic Chicken Fried Chicken





INGREDIENTS


2 teaspoons garlic powder, or to taste


1 teaspoon ground black pepper


1 teaspoon salt


1 teaspoon paprika


1/2 cup seasoned bread crumbs


1 cup all-purpose flour


1/2 cup milk


1 egg


4 skinless, boneless chicken breast halves - pounded thin


1 cup oil for frying, or as needed





In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.


Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.


Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.
My favourite is





Boil potatoes whole in peel until tender. Make sure you salt the water. Hard boil some eggs too. As many as you like depends on your taste.


Peel potatoes and eggs and do a rough chop so they are Chunky.


In a bowl mix up Mayo, mustard, washabi, salt and pepper and a dash of red pepper for heat and a little rice wine vinegar for sweetness. Mix this well and then add potatoes and eggs and mix it all up being careful not to mash the potatoes. Add chopped chives or green onion for dress and flavor. Serve with Shrimp or chicken and it's great. Note if you want a more specific recipe in portions email me and I can provide.
Mix boiled new potatoes, mayonaise, lemon juice and chopped chives, salt and pepper. Keep it simple folks!





Serve with cold meat, or fried chicken and a fresh green salad and sliced tomato.
any of the above recipes will suffice, just make sure you use miracle whip that plane mayonnaise is nasty on potato salad.. dont forget a scoop of sweet relish..
Goes with just about anything- boil and partially mash potatoes, add mustard and mayo and relish.
