Here are some great salad recipes..Good Luck!

you don't need to lose weight, but here's my favorite salad:

spinach, chicken breast, red peppers, orange or grapefruit segments, and a yogurt orange poppyseed dressing. and some kind of nuts: almonds, pecans, or walnuts
I love this salad....spinach leaves, strawberries and pecans. Ugh, but I can't think of the dressing that goes with it. It's a sweet dressing, not creamy. Sorry. But is is so good! You can also add raisins.

What you put on the salad can really add up in calories. Watch the croutons, meat, black olives and dressings!
lettuce, some chicken and sesame dressing, as simple as that
Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:

Salad:

1 cup long grain rice

1 15 ounce can pinto beans, rinsed and drained

1 1/2 cups fresh or frozen whole kernel corn

3 green onions, sliced

1/4 cup red sweet pepper, chopped

Vinaigrette:

1/4 cup corn oil

2 tablespoons lime juice

1 tablespoon cider vinegar

1 tablespoon brown sugar

2 pickled jalape帽o peppers, stemmed, halved and seeded

1 teaspoon chili powder (or more to taste)

1/4 teaspoon salt

1/2 teaspoon ground cumin

Preparation:

Salad:

Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.

Vinaigrette:

Combine corn oil, lime juice, vinegar, brown sugar, jalape帽o pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.
make sure you sprinkle some cockaberries
Congrats on the weight loss. Although I think your weight is fine, as far as salads go (defining salad as some sort of raw greens with veggies, or some sort of raw veggie thing), it's usually the dressing that adds the calories. I stick with the low-fat dressings, as I think the fat-free have a weird taste and texture. I like Ken's Steak House low-fat raspberry vinagrette and caesar dressings in particular.

My favorite summer salad: chop up some homegrown tomatoes and fresh basil (don't try to substitute grocery tomatoes and dried basil, it's not the same), throw in some grated part-skim mozzarella cheese (don't go overboard, even part skim is high in fat and therefore calories), and a small splash of olive oil. Most yummy.
