I have a question about a chicken salad recipe?

I want to make a healthy chicken salad and alot of places say to use yogurt instead of mayo. With that yogurt, should it be the sweetened kind or nonsweetened? We make our own yogurt and it doesn't have any sweetener to it so I was just wondering if i should add some.

No, don't add sweetener. If you want your chicken salad to have a little sweet, to balance out the tanginess of the yogurt, try adding halved green grapes. I've also added diced apples to my chicken salad.

Definitely plain yogurt, and like the other answerer mentioned, it's a better taste if you mix it half and half.





Try adding chopped sweet onion, chopped celery, and a sprinkling of chopped walnuts, plus a little garlic powder.





A lot of people really like adding dried cranberries, but if you're going to do that, make sure it's the unsweetened kind. Brands like Crasins add a lot of sugar, and since you said you're looking for a healthy chicken salad, stay away from the ones with added sugar.
Greek Chicken Salad





2 cups cubed, cooked chicken meat


1/2 cup sliced carrots


1/2 cup sliced cucumber


1/4 cup sliced black olives


1/4 cup crumbled feta cheese


1/4 cup Italian-style salad dressing





In a large bowl combine the chicken, carrots, cucumber, olives and cheese.


Gently mix together.


Add the salad dressing and mix well.


Cover and refrigerate.


Let flavors marinate for at least 1 hour.


Serve on a bed of lettuce if desired.


Or in a pita pocket





Twisted Chicken Salad with Tostadas





This easy chicken salad includes diced jalapenos, which make it spicy and delicious. You can eat it with crackers, but it tastes much better with tostadas.';





vegetable oil for frying


10 corn tortillas


1 (10 ounce) can chunk chicken, drained and flaked


1/2 cup fat free mayonnaise or plain yogurt


2 1/2 tablespoons canned jalapeno pepper slices, undrained


1 tablespoon jalapeno juice


salt and pepper to taste








Heat oil in a large heavy skillet over medium-high heat. One at a time, slip a tortilla into the hot oil. If the tortilla starts to puff up, press it down with a fork. When crisp and brown, remove to paper towels. Repeat with remaining tortillas.


Place the chicken in a bowl, and separate with a fork. Stir in the mayonnaise. Dice the jalapenos (reserving the liquid), and stir them into chicken salad. Pour in 1 tablespoon jalapeno juice, season with salt and pepper, and stir well. To serve, spread the chicken salad on the tostadas





BLT Chicken Salad





1/2 cup fat free mayonnaise or plain yogurt


4 tablespoons barbecue sauce


2 tablespoons finely chopped onion


1 tablespoon lemon juice


1/4 teaspoon pepper


8 cups torn salad greens


2 large tomatoes, chopped


1 1/2 pounds boneless skinless chicken breasts, cooked and cubed


10 bacon strips, cooked and crumbled


2 hard-cooked eggs, sliced





In a small bowl, combine the first five ingredients; mix well.


Cover and refrigerate until serving.


Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs. Drizzle with dressing.
I don't make my own yogurt but I do use plain yogurt mixed half-and-half with mayonnaise for tuna salad, and I think that would work with chicken salad.





I don't like the flavor when I use all yogurt, but using about half yogurt and half mayonnaise gives a great flavor and I figure at least I am getting half the mayo that I normally would. Also, if you add a lot of finely chopped celery and carrots, that will moisten things up and you won't need as much of the yogurt/mayo mixture.
