Good Salad Recipes!?

I'm supposed to make one for our Easter dinner. It seems as if I always do some fruity cool whip salad or something with Jello. It's OK, but I need a different recipe. Does anyone else have any ideas? Maybe with veggies?Good Salad Recipes!?
try a potato salad. add diced up green olives, green bell pepper, sour pickles, a dash of mustard, and some miracle whip. chill before serving. yummy! a favorite for easter!Good Salad Recipes!?
Try a Frittata.


Defrost enough of your favourite mixed veges to 2/3rds fill a large 12'; fry pan, but begin by softening a large diced onion. Add drained veges and at least 6 whisked eggs. Stir to combine and cook gently until about 1/3 cooked and transfer to the oven under the top grill element until set.





Can be eaten hot or cold and as you can see you could use whatever veges you wish, and SEASON. Forgot that bit.





Watch out for plastic handles under the grill or in he oven.
Spicy Sweet Potato Salad





INGREDIENTS


2 sweet potatoes


1 pound red potatoes


1 pound Yukon Gold potatoes


1 large red onion


2 teaspoons salt


1 clove garlic, minced


1 jalapeno pepper, seeded and minced


1/4 cup fresh lemon juice


1 cup mayonnaise


1 tablespoon curry powder


1/4 cup chopped fresh parsley


1/4 teaspoon freshly ground black pepper





DIRECTIONS


Wash, pierce with a fork, and microwave the sweet potatoes and Yukon Gold potatoes until tender. Boil the red potatoes in salted water until tender. Do not overcook the potatoes, or they will not hold up in the salad. Drain red potatoes and chill all three types overnight.


Peel the sweet potatoes and Yukon Golds, and dice into 1/2 inch cubes. Cut red potatoes into fourths. Place all potatoes into a large bowl.


Slice red onion thinly and place into a colander. Sprinkle the salt on the onion and let it sit in the colander for 30 minutes to drain. Squeeze onion to remove excess water, and add to the bowl with the potatoes. Mix in the garlic, jalapeno, lemon juice, mayonnaise, curry powder, parsley and pepper, and chill until ready to serve.

Amazingly Good Chicken Salad:





1 hour 15 min prep


12 servings





6 chicken breasts (bone in)


Kraft mayonnaise (to taste)


2 teaspoons Good Seasonings Italian salad dressing mix (in packet)


2 tablespoons lemon juice


salt and pepper (if desired)





1. Boil chicken breasts until tender (about 45 minutes).


2. Cool and remove chicken from bones and chop fine.


3. Mix mayonnaise, Good Seasons Italian seasoning, lemon juice and salt and pepper (if desired)- add to chicken and mix well.


4. Better if made the day before serving so flavors can meld.


5. Refrigerate immediately.


6. May need to add extra mayonnaise the next day and a little extra seasoning if desired.
I have found that Martha Stewart has some of the best recipes around. I have found a lot of vegetarian meals on her site and the salads she makes are fantastic.
how about a sweet and sour cucumber salad? still a little sweet but not fruity. either buy an asian sesame dressing and mix in a little extra honey or make your own with red wine vinegar, vegetable and sesame oil, a bit of mustard, sugar, honey, jalepeno, salt and pepper. thinly slice cucumber, red onion, yellow or red peppers and toss with the dressing. let it sit for a few hours or overnight to intensify the flavor.





or you could make a caesar salad. super easy and yummy. bu dressing, cut up some romaine lettuce, shave some parmesan cheese and add croutons. yum!
