I have two dozen hard boiled eggs. You can only eat so much egg salad. I would love some ideas.

Well..you could mash it up, add some mayo and spread it on toasted bread.. or you could make an egg curry...
Deviled eggs, potato salad with chopped eggs, sliced boiled eggs you put into a basic white sauce flavored with curry over rice, eggs in cheese sauce sliced or in quarters over buttered toast, cook a tomatoe sauce with green pepper, onion and sauteed celery in it and put the eggs in a bowl and pour the sauce over and heat it.. Make a meatloaf mix... put half in the loaf pan... add a row of whole boiled eggs down the middle long way, then add the rest of the meat... everybody will get a slice of egg in their meat and it looks kinda pretty, too!

I usually use a can of beets mixed with vinegar, water, and sugar. I would mix this in a nice size container and let sit for about a week in the fridge or until pinkish red inside.

Yes. I like to use a can of tuna, mix in a finely grated hard boiled egg, some celery , onion, olives, and even some red bell peppers, or green bell peppers,,,,,,mix with salad dressing you like.....and add some cheese and lettuce on your bread, add a pickle, and make a wonderfully thick sandwich spread..... It's really good !! And you can add your favorite chips......
You could try making potatoes salad or something... Or Deviled eggs, those are so good. I dont have any recipes, but its not hard to find them...
Egg, Nut and Mushroom Pate
Ingredients:
1 large yellow onion, peeled and sliced thin
1 large clove garlic, peeled and minced
1/4 pound mushrooms, wiped clean and sliced thin
1/2 cup butter or margarine
6 hard-cooked eggs, peeled and quartered
1 cup walnuts
1/2 cup unblanched almonds
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
Directions:
In a heavy skillet over medium heat, saute onion, garlic, and mushrooms until soft, but not browned, stirring often. Remove from heat and let cool.
In the bowl of a food processor fitted with the metal blade, place hard-cooked eggs, walnuts, and almonds. Pulse about 5 times until minced. Add cooled onion mushroom mixture, Worcestershire sauce, salt, and pepper. Process about 5 seconds to combine.
Pour into serving bowl, cover with plastic wrap touching the top of the pate, and refrigerate a least two hours to let flavors meld.
Before serving, let pate sit for 30 minutes at room temperature. Serve with your choice of crackers, melba toast, or toasted bread rounds. Yield: 3 cups
you can add mayonaise and some other things to make egg sald sandwhiches or you can make devil eggs at a party or something
I like to make deviled eggs. Peel some hardboiled eggs, cut in half and pop the yolk out into a separate bowl. Mash yolkes, mix with salt, pepper and some mayonnaise, add a little mustard if you like, and stuff the mix back into the halves. Sprinkle with paprika if you like, and enjoy.
I also like to chop and add one or 2 to my tossed salad.
Here is a recipe for egg curry:
6 hardboiled eggs
1/2 lb potatoes peeled %26amp; cubed
2 tbsp oil
1 onion finely chopped
1/4 lb plum peeled tomatoes
1 tsp salt
1tsp turmeric
1tsp garam masala
1/2 tsp chili powder (cayenne)
1/2 tsp tandoori masala
1 tsp cumin
1/2 c water
Chopped coriander(cilantro) for garnish
1. Shell eggs and cut into halves lengthwise
2. Heat the oil, add onion and cook until golden brown, stirring.
3. Add tomatoes and cook %26amp; stir for 2 minutes more. Add spices and cook 1 minute more.
4. Add potatoes, mix well and cook %26amp; stir for 2 minutes. Now add eggs and cook for 3-4 more minutes.
5. Add water, bring to boil; lower heat and let simmer for about 20 minutes, stirring occasionally.
Serve garnished with the chopped coriander if desired, over rice. Yogurt is also a nice garnish.
Deviled Eggs- Cut the eggs in half, scoop out the yolky stuff, add spices, and then put the egg stuff back in the eggs. Sorry that isn't very informative, but i don't have the recipe with me. They are delicious!

Well, you can also try the following recipe (my own original pride and joy) there are no specific measurements...it depends on your tastes and preferences:
-Boiled eggs (chopped up)
-Finely chopped red,green and yellow peppers
-Finely chopped red onion
-1clove of garlic (cut into quarters)
-Olive oil
-A dash of balsamic vinegar
-Salt and black pepper
Mix all ingrediants and marinate in the olive oil for at least a couple of hours before eating.Serve with toasted Chibata bread (optional with melted parmesian cheese on top).

Cut them in half lengthwise, scoop out the yolks, put them into a bowl and mix them with (per 4 eggs) 1 -2 teaspoons of mustard, 1 teaspoon of (olive) oil, 3-4 finely chopped capers(optional), salt and pepper to taste, if you like you can add some wine(!)- vinegar. Make everything into a smooth paste, put back into egg halves, sprinkle with parsley. It makes a nice, quick starter which looks very good if you put it on a lettuce leaf and garnish with sliced tomato and parsley sprigs.
You could also use your eggs in a caulifower or turnip dish where you make a cheese sauce and put quartered eggs in just long enough before serving that the eggs heat up sufficiently.
For my family at Easter time we always have at least 3 dozen hard boiled eggs and we make them all into deviled eggs. We never have any leftovers.
Cut eggs in half lengthwise and remove yolks. Mash yolks with:

spicy mustard %26amp; yellow mustard(to your taste) I like a little zing so I add a lot of mustard a little at a time until it tastes right to me.
salt
pepper
paprika
dash of hot sauce
Once is is smooth put it into a zip lock platic bag(not generic) and cut the tip off and squeeze it back into the holes that the yolks came out of.

1. Asparagus with eggs! Crush the hard boiled eggs, melt butter, mix with salt pepper and nutmeg, stir till all is hot. Yummy with asparagus!
2. Cut eggs the long way. Take the eggyolks out, mix with pepper, salt + other spices you like, and mayonnaise. Put the mix back in the eggwhite. Not bad either...

EGGS MIMOSA :
6 hard boiled eggs
parsley
mayo
black olives
salt %26amp; pepper
Cut the hard boiled in half, take carefully the yokes off and
put them (except 2) in a bowl where you add the shredded parsley, salt, pepper %26amp;
a little of mayo.
Feel the egg whites with the mixture. Smash the other 2 yokes a little and
sprinkle the yokes on top of the eggs.
Decorate with a slice of black olive
for dinner last nite we layered it in green bean casserole i thought it was going to be disgusting but it was really good
Besides what everone else said, here is a recipe for Chicken A La King
3 tablespoons chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1/2 pound cooked, cubed chicken meat
1 hard-boiled egg, sliced
1 1/3 cups cooked spinach
3 tablespoons chopped onions
DIRECTIONS
Place onion in a medium saucepan over low heat and sprinkle with flour and salt. Stir together and add milk. Bring to a boil and cook until thickened.
Mix in chicken, egg and spinach. Heat through and serve.
You could make deviled eggs like my mother did.
Deviled eggs always are a crowd favorite if you take them to a party or something.
I like eggs on my salad, they always add something a little different to the usually lettuce, tomato and other veggies.
I cut them in half (without the shell of course!) and I take out the yolk (the yellow part) and then I mix it with mayonnaise, tuna to make this paste. When you are done with the paste, put it back into the little hole where the yolk was in and it is deelish!!
I am in the same boat - made a nice green salad and added chopped eggs
Two dozen is not much. Slice them on a salad, eat them for breakfast (my favorite). And since she made them, put them in her lunch. And if push comes to shove, take them to your daughter's school and have them give to kids for morning snack.

among many of the other answers, i like adding them to pasta salad, and adding them to tuna. Tuna, miracle whip (not mayo), chopped up sweet pickles, and hard boiled eggs...amazing!
